Stuffed-Crust Pizza

Crust:
1/4 cup warm water
4 tablespoons sugar
1 package dry yeast
3/4 cup milk `
4 tablespoons unsalted butter
2 1/2 cups all-purpose flour, plus more for kneading
3 tablespoons cornmeal, plus more for the pan
1 egg, beaten
1 teaspoon salt
8 ounces mozzarella
Olive oil, for coating bowl

Topping:
1 tablespoon sugar
3/4 cup prepared marinara sauce
1/2 cup canned stewed tomatoes, strained and coarsely chopped
1 1/2 cups grated mozzarella
1 medium onion, finely chopped
1/2 cup sliced mushrooms
1/2 cup black olives
1/4 pound sliced pepperoni
1 teaspoon dried basil
1 teaspoon dried oregano

Preheat the oven to 450 degrees F
To make the crust: Stir the water, 1 tablespoon of the sugar, and the yeast together in a small bowl!. Let stand until foamy, about 10 minutes!. Meanwhile, heat the milk in a small saucepan!. Remove from heat, add the butter, and stir until melted!.

In a large bowl, stir together the flour, cornmeal, remaining sugar, egg, milk mixture, yeast mixture, and salt until a soft dough forms!. Turn dough out onto a floured surface and knead until smooth, adding flour as needed if dough is sticky, about 10 minutes!. Clean the bowl and coat it generously with olive oil!. Form the dough into a ball, put it in the bowl and cover with a kitchen towel!. Let rise in a warm place until doubled in size, about 1 hour!.

Punch the dough down and let rest for 10 minutes!.

Cut the mozzarella into sticks about 3 by 3/4 by 3/4-inches!. Sprinkle a large baking sheet with cornmeal!. Place the dough on the baking sheet and stretch it into a 15-inch circle!.

Arrange the mozzarella sticks around the dough about 1-inch in from the edge, then roll the dough over the cheese to form the stuffed rim!.

To make the topping: Stir the sugar into the marinara sauce and spread onto the pizza dough!. Scatter with the stewed tomatoes, then the mozzarella!. Add the onions, mushrooms, and pepperoni!. Sprinkle with basil and oregano!.

Bake until crust is golden brown, 15 to 20 minutes!. Cut into wedges and serve immediately!.Www@FoodAQ@Com

The toppings are up to you but we like it loaded!. Sausage!. pepperoni, olives, onion, mozzarella, cheddar and jack cheeses, pickled jalapenos, mushrooms!. We also like to cook it on the BBQ and get a nice thin and crisp crust using the following recipe

BBQ Pizza


Dough
1 1/4-cup warm water
1-tsp sugar
1-tbsp dry yeast
3-cups flour
5-tbsp oil, margarine, or shortening
1/2-tsp salt

Parchment paper
Vegetable oil
Your choice of toppings
This picture was taken with an old method of dressing the pizza right on the grill!. We find it better to take the pizza right off the grill after the first side is done, dress with toppings and then put back on the grill

Prepare yeast in warm water with sugar
Let stand 5 min
In a large bowl, add flour & salt
Then add yeast mixture & oil
Mix together, kneading a few times
In greased bowl, form into ball and cover with plastic wrap or a tea towel
Let rise in warm place until double in size (approx 1 hr )

Cut parchment into 2 squares slightly large enough for the pizza
Lightly oil the paper on one side
Place 1/2 of the dough on each piece of paper and roll to 12 inches round
Lightly oil the top of the dough
Fire up the grill on high for 5 minutes to heat thoroughly
Lower temp to medium before putting the pizza on
Lay dough on grill with paper side up
Gently peel off the paper
Grill for approximately 5 minutes or until crust is golden with nice grill marks
Flip dough onto a baking sheet with the cooked side up
Place your toppings on, not too many as it will weigh down the crust
Slide back onto grill
Close lid and cook for another 5-10 minutes or until cheese is melted

Will make 2 - 12 inch pizzas

I like a Mexican Pizza - I use a store bought dough, the kind you roll out!. I use a baking stone!.

1 pound ground beef browned
Sliced black olives
Sliced Jalapenos
1/2 onion diced and sauteed
1 can rotels diced tomatoes w/chili peppers, drained
1 cup Store bought pizza sauce
1 cups shredded pepper jack cheese
1 cup shredded mozzerrala cheese
1 cup medium cheddar cheese

Roll out pizza dough, place on baking stone, spread the pizza sauce on dough, top with Rotels diced tomatoes!. Mix all the cheeses, spread 1/2 cheese over sauce and tomatoes!.

Sprinkle with ground beef, onions, jalapenos, & black olives, add remaining cheese!. Bake at 400 degrees for 18 - 21 minutes!.Www@FoodAQ@Com

Chicago Style Deep Dish Pizza

1 roll of refrigerated pizza dough
2 Tbsp!. cornmeal, divided
2 cups shredded mozzarella cheese, divided
1 cup chopped onions
1 cup chopped green peppers
1 tsp!. Italian herb seasoning
1 can diced tomatoes, drained and divided
4 oz!. thinly sliced pepperoni, divided
Cooking spray

1!. Preheat oven to 400 degrees F!. and lightly coat a 9-inch square
pan or a cast iron skillet with cooking spray!.
2!. Sprinkle 1 Tbsp!. of cornmeal on a flat surface before rolling out
dough!.
3!. Roughly shape dough to conform to the pan or skillet and press
into bottom and sides of prepared pan; crimp extra dough at top
edges!.
4!. Sprinkle dough with remaining cornmeal!.
5!. Layer dough with 1/2 of the remaining ingredients in the order
listed: cheese, onions, green peppers, seasoning, tomatoes and
pepperoni!.
6!. Repeat layers in the same order as above!.
6!. Bake for 5 minutes in preheated 400 degree F!. oven!.
7!. Reduce oven temperature to 375 degrees F!. and continue to bake
for 20 minutes or until crust is brown!.
8!. Cool in pan for at least 5 minutes before serving!.Www@FoodAQ@Com
