Pineapple Rice
1 tbsp olive oil
5 scallions, white and green parts, thinly sliced
3 cloves garlic, minced
1 small red bell pepper, diced
1 cup jasmine, Texmati, or basmati rice ( you can also use regular long
grain rice )
2 cups water
1 tsp salt
1/2 cup chopped cilantro
1 cup diced pineapple ( fresh or canned )
In a medium saucepan, heat the oil over medium heat!. Add the scallions and
garlic and cook, stirring frequently until the scallions are tender, about 2
minutes!.
Stir in the red pepper and cook until the pepper is tender, about 5 minutes!.
Stir in the rice and cook 2 minutes until well coated!. Stir in the water and
salt and bring to a boil!. Add 1/4 cup of the cilantro!.
Reduce to a simmer!. Cover and cook until the rice is tender, about 15
minutes!. ( If using regular long grain rice, cook about 20 minutes!. ) Stir
in the pineapple and the remaining cilantro and serve!.
Coconut Rice
1 1/2 cups rice
1 1/2 cups coconut -- fresh and shredded
3 tablespoons butter/oleo/ghee
1 onion -- medium and chopped
1 pinch salt
1 teaspoon cardamom -- ground
Soak Rice for 30 minutes in 1 1/2 cups water!.
At the same time, soak Coconut for 30 minutes in 2 cups water!.
Drain rice and set aside!. Reserve the water!.
Blend the coconut, using the water in which it was soaked!. Strain and reserve the coconut milk
Heat butter/oleo in a skillet!. Add onions and saut^? until golden!.
Add rice and fry a few minutes!.
Add coconut milk and water in which the rice was soaked!. Bring to a boil!. Add salt to taste and cardamom!. Lower heat and cook until rice is done

Yield: 10 Servings
1 Chicken, 2-3 lbs!.

Cornbread Dressing: Substitute crumbed cornbread for cooked rice!.
Save some for later: Freeze the dressing mix, i!.e!., before adding rice/cornbread, separately!. When needed, defrost the mix by heating it and add the rice or cornbread!.

Stir to combine!. Cook over medium heat until mixture thickens
and flavors blend, about 10 minutes!. Remove bay leaf!.
Place hot rice in a serving dish!. Pour bean mixture over!.
Sprinkle with crumbled bacon!. Sprinkle with chopped parsley
or fresh thyme or oregano leaves Serve!.
You may vary this hearty dish by adding strips of red, green
or yellow pepper, chopped parsley, sliced smoked sausage

1 teaspoon red pepper flakes
1/2 cup minced yellow onions
1/2 cup finely chopped carrots
1/2 cup chopped smoked tasso, or chopped ham
8 cups cooked white rice
3 tablespoons soy sauce
1 tablespoon sugar
2 teaspoons black pepper
1 pound jumbo lump crab, picked of shells
3 eggs, scrambled firm, cooled and chopped
Cut the shrimp in half through the center, and season with paprika, garlic powder, onion powder, oregano, and cayenne pepper!. Set aside!.
In a large wok or large, non-stick skillet, heat the peanut and sesame oils over high heat!. Add the garlic, ginger, 1/4 cup of the green onions and red pepper, and cook, stirring continuously so they do not burn!.

Butternut squash wild rice rissoto
Start baking a butternut squash (cut in half and salted) at 350 until firm but easily cutable!.
First off I know rissotto needs to be made with a special grain but its good with rice too!
Start off with some carrot onion celery and rice all about the same size!. Get a pan hot with oil and saute until it is brown!.
When it has browned add a little chicken broth and white wine (chardonnay or reisling)!. (about 1/2 cup)
Let that simmer in and be absorbed and then repeat that step!.
Continue to repeat that step until the rice is tender!. Add salt and pepper and butter!. Cube your butternut squashe and add a little more liquid and let every thing cook to work together!. And bam! A wonderfull dish :)Www@FoodAQ@Com
