Cover them with liquid, and leave it on LOW all day!. I think 4 hours minimum for whole breasts, 6 or 8 is better!. I use prepared chicken broth with a tablespoon of mixed seasonings (look up "Taco Seasoning Mix" to find some good ones, but it's basically chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper, red pepper)!. I think that breasts turn out better if there is a little fat in the pot with them!. Butter, olive oil, whatever!.Www@FoodAQ@Com

I made shredded pork recently in the crockpot, here's what I would do if I were you:

Put the chicken and the sauce (if you have it already) in the crockpot with a cup or two of water!. (enough to just about cover it) Put it on low for as long as you're at work, and it should be ready and tender by the time you get home!. The sauce will cook the flavor in, which will help!. While you shred the chicken, turn the crockpot on high, and put the chicken back in just long enough to make it all hot and saucy again!.Www@FoodAQ@Com

One way I prepare shredded chicken for enchilladas and the like is by cooking it in the microwave oven!.

First I take each breast and cut it into narrow strips!. Then, I place the chicken and, depending on the quantity I am cooking, cook it on high for 8-10 minutes!. Turn your chicken after about half way through, so it cooks through evenly!.

Then, I remove it from the microwave and allow it to cool for a few seconds before shredding it with a fork!.

I haven't tried using a crock pot!. I'm sure that's equally effective!. I just happen to be a bit pressed for time, sometimes, so I rely on my microwave oven - perhaps too much sometimes!.Www@FoodAQ@Com

A very quick easy way is boiling the chicken breasts!. They are very easy to shred afterwards!. Frozen, boil for about 20-30 min!. depending on the size!. Thawed, approx!.15 min!. Always check to be sure tho!. I've never really timed it, just guesstimating right now!.Www@FoodAQ@Com

Put them in the crock pot with water for about 20 min!.
When they have been cooked take them out and let them cool!.
When they are cool enough to touch, then shred them!.
Make sure you buy chicken breast that is easy to shred!.Www@FoodAQ@Com
