I just tried a recipe for "chewy" chocolate chip cookies that are soft and chewy, similiar to a bakery cookie:

INGREDIENTS
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Preheat the oven to 325 degrees F (165 degrees C)!. Grease cookie sheets or line with parchment paper!.
Sift together the flour, baking soda and salt; set aside!.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended!. Beat in the vanilla, egg, and egg yolk until light and creamy!. Mix in the sifted ingredients until just blended!. Stir in the chocolate chips by hand using a wooden spoon!. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets!. Cookies should be about 3 inches apart!.
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted!. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely!.

Enjoy, they are delicious!Www@FoodAQ@Com

Hello,
The recipe that you use and storage really effects the hardness or softness of the cookie!. Here is an old tip I learned a long time ago!. Place a piece of fresh bread in the container with your cookies!. The cookies will asorb the moisture of your bread and remain soft!. I even to this when assembling large platters of cookies, I assemble the tray, place the bread on top then wrap in plastic wrap!. This is great when I'm serving at the holidays!. Just don't forget to remove the bread before serving!

Here is a link to my favorite chocolate chip cookies!. They tend to stay moist and chewy for quite awhile!. They are buttery and loaded with chocolate chips!

Good Luck!
I hope this helps you out!

I had the same problem!. My husband told me to figure it out or don't bake cookies anymore!. For a choc!. chip cookie follow the recipe but add about a 1/4 c!. of flour extra!. also make sure your butter has been sitting out all day!. I take them out before they look done and store them in an airtight container now!. I used to just use saran wrap on a paper plate!. Good luck and happy baking:)Www@FoodAQ@Com

I actually discovered that adding a little vegetable oil (to those mixes that don't call for it) will keep them moist!. Mine stayed moist for an extra week!. also, if they tend to get a little hard, bake them again to get that fresh taste (but just for a few min!.)Www@FoodAQ@Com

you take them out about five minutes before there down and let them sit!.Www@FoodAQ@Com
