Question: I have a recipe question!?!?!?
What could be used to make a white sauce for spinach,mushrooms and chicken enchiladas!?I had them at a restaurant,but can't put my finger on the sauce!.Positive input is appreciated!.!.!.Www@FoodAQ@Com

In my chicken enchiladas, I use Healthy Request Cream of Chicken soup (undiluted) and 1/2 cup lite sour cream!. Mix in your chicken, spinach, etc!.

Roll up in tortillas and pour a can of enchilada sauce on top!. Sprinkle with cheese and bake!.

It will taste just like a Mexican restaurant!Www@FoodAQ@Com

Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
2 Tbsp!. butter
2 Tbsp!. flour
1 cup milk
dash salt
dash white pepper
Preparation:
In heavy saucepan over low heat, melt butter!. Stir in flour with a wire whisk!. Cook over low heat for three minutes, stirring constantly (This mixture is called a roux)!. Do not allow the mixture to brown!. Gradually stir in milk, whisking constantly!. Cook over low heat for 3-5 more minutes until sauce begins to thicken!. Season to taste!. CHICKEN ENCHILADAS WITH WHITE SAUCE

4-5 c!. shredded chicken
Salt and pepper to taste
1 dozen soft corn tortillas
1 can cream of chicken soup
1/2 can chicken broth
1 (4 oz!.) can diced green chilies
8 oz!. sour cream
2-3 c!. Monterey Jack cheese

Roll up tortillas (enchilada style) with seasoned chicken!.
Mix all other ingredients together (except cheese)!. Pour over enchiladas in 9x12 inch pan!.
Top with cheese!.
Bake at 350 degrees until cheese is bubbly, about 30 minutesWww@FoodAQ@Com

White Sauces For Vegetables Or Biscuits Recipe

Ingredients
oil
flour
salt and pepper to taste
milk

Thin:
1 tbs oil, 1 tbs flour, 1/2 tsp salt and dash pepper, 1 cup milk

Medium:
2 tbs oil, 2 tbs flour, 1/2 tsp salt and dash pepper, 1 cup milk

Thick:
3 tbs oil, 4 tbs flour, 1/2 tsp salt and dash pepper, 1 cup milk

Very thick:
3 tbs oil, 1/2 cup flour, 1/2 tsp salt and dash pepper, 1 cup milk

Directions
To cook: Blend oil with flour and seasonings in small, heavy saucepan!. Add milk gradually!. Cook over medium heat to boiling, stirring constantly!. Reduce heat and cook 1 minute longer!.

You start by making a white sauce base!. Butter or oil, add flour, and cook for a few minutes!. Slowly add milk or cream to your rue until you have a medium to thin sauce!. Next you would add some grated cheese!. Slowly melt in until you have the thickness you desire!. Do not forget to season your sauce per your taste!.

As far as the cheese goes, in your supermarket you should have a section that will have Mexican dipping cheese!. It is usually in the cream cheese, sour cream, area, it is a milk cheese made for melting!. That is the cheese I would use!. You can usually find it in either the mild or hot variety!. or:White Sauce Chicken Enchiladas

1 pound chicken, cooked and shredded (I boil 12 frozen chicken tenders in water that has been seasoned with cumin, salt, pepper, onion powder and garlic powder!. I boil them for at least an hour!.)

1 small (4 ounce) can green chiles

3 cans cream of chicken soup (I use the fat free version!.)

1 16 ounce container sour cream (I use fat free!.)

10 soft taco size tortillas (I prefer the multi-grain variety!.)

In a medium saucepan, heat the soup, chiles and sour cream until simmering!. Layer a sprayed 9*13 pan with a thin layer of sauce!. Add the shredded chicken to the sauce!. Remove from heat!. In the center of each tortilla, put about 2/3 cup of sauce!. Sprinkle with cheese!. Roll up and place in the pan!. Spread remaining sauce on top of all the rolled up tortillas in the pan!. Well, white sauce is made with butter, flour and milk, make sure you cook the flour properly though!. If it was cheesy, add grated cheese, stirring lots so it doesnt stick, I add some mustard too, oh and salt and pepper!. Hope this helps in some way!.Www@FoodAQ@Com

you can make your own white sauce by melting some butter in a pan, wisk in some flour untill it thikens!.!.!.then add milk!.!.!. it will thicken into a plain white sauce!. From there, you add in whatever seasonings you may like or want for different uses!.Www@FoodAQ@Com

There is a bottled Alfredo sauce that is pretty good!. Other than that, I would make my own with flour, butter, cream and my choice of seasoning!.

Campbells makes a soup called cream of chicken-mushroom and another cream of chicken with pepper jack cheese!.!.!.either would work well!.Www@FoodAQ@Com
