Answers:
Very good question: Yes, it would be a very good substitute for the vanilla!.!.!.!.!.!.I rarely run out of vanilla, but the last time I did, I used Frangelico (Italian Hazelnut liqueur) in my peanut butter fudge and it was a HIT!.!.!.!.!.!.!.!.!.!.!.Gee, I didn't know HOW good it was till in 2005 it took the Blue Ribbon at the Del Mar County Fair!.!.!.!.!.!.!.!.Enjoy!!!

EDIT: I don't know where the poster above me is from, but here in SoCal, Maple Chocolate PB fudge is a real hit!.!.!.!.!.!.Www@FoodAQ@Com

It will change the flavor of the fudge!. When I was young I substituted vanilla with almond in Brownies!. It was awful! I later learned that not all extracts are created equal!. In other words, you may not need as much to get the flavor you're looking for!.
Still, your fudge will taste like it has maple syrup in it!.Www@FoodAQ@Com

I think it would really compliment and bring out the flavors of the peanut butter very well! Great idea, I have to try that!Www@FoodAQ@Com

Yeah, totally!. Kinda like peanut butter with syrup on a chocolate cookie! Yes, that would be good!.Www@FoodAQ@Com

I wouldn't do it!. Maybe if it was a white fudge w/ nuts (not peanuts) it would be good!.Www@FoodAQ@Com

If you like the flavor of maple syrup it shouldn't be a problem!.Www@FoodAQ@Com

Absolutely I have done that and it is yummy!Www@FoodAQ@Com

ICK!. Imagine eating your fudge with maple syrup and that would be what it would taste like!. Maple is not something that compliments chocolate and is a pretty strong flavor!. Vanilla is more complimentary to confections and baking which is why so many baking/candy recipes call for it!. They do NOT substitute for each other!. Vanilla is used because it brings out the cocoa flavor in the chocolate!. Maple would not bring it out it would over power it and not taste the way it should!.Www@FoodAQ@Com

That sounds awesome!!

You could also try almond extract!.!.That is my favorite kind to use instead of vanilla!.!.

When it comes to extracts, you can pretty much use anything you like!.!.!.it only alters the flavor and smell!.!.!.

Good luck!.!.!.and thanks!.!.!.I am totally craving fudge now!Www@FoodAQ@Com
