To cut a cake into layers, I would take my knife and put it in the middle of the side of the cake like this:
----------
X
---------
put your knife where the x is (sideways) and gently cut until there are two layers!. Like cutting a bagel while it's laying down flat!.Www@FoodAQ@Com

Wanted to mention: When you cut the layers, it is best to cut by rotating the actual cake and not rotating the knife around the cake!. For example: put the cake on a Lazy Susan or something else that spins and insert the knife in to one side of the cake and turn the cake instead of trying it the other way around!. It's easier and you layers will be more even!.Www@FoodAQ@Com

I don't know about a collar!. You cut a cake into layers by taking a layer and basically cutting it in half long ways!. But you have to use a deep enough pan in order to do that!.Www@FoodAQ@Com
Not sure about the collar thing, but cutting a cake into layers would be cutting it in half from side to side instead of top to bottom!. You could put a filling in between each layer!.Www@FoodAQ@Com
What kind of cake mix are you using that calls for all that fuss!? Just bake it in 2 layers and slap it together with frosting!. No collar needed!.Www@FoodAQ@Com
