If it's a Friday night at home with the family, make it special with a fish fry!.

And to make it special you absolutely must have hushpuppies!.

Don't know how to make hushpuppies!?
1 cup white cornmeal
4 tablespoons flour
1 tablespoon baking powder
1/3 cup onion - diced
1/8 tablespoon baking soda
1/2 cup buttermilk (more or less)
1/8 tablespoon salt
1/8 tablespoon black pepper
Cooking oil (enough to submerge the hushpuppies)

1!. Mix all ingredients in large bowl!. Add enough buttermilk to form a dough that sticks together when rolled in hands!.
2!. Preheat oil until a wooden spoon handle placed in oil produces bubbles around the handle!.
3!. Form hushpuppy balls abouth the size of golfballs by rolling in hands!.
4!. Fry in deep oil, watching closely (they cook quickly)!.
5, Remove when golden brown!. Serve hot!.
