This is one of the easiest of my recipes and the fam loves it!.

Chicken and Yellow Rice

1 3!.5 pound chicken cut into 8 pieces
1 16oz bag seasoned yellow rice (I like Vigo brand)
4 medium size ripe tomatoes
1/4 lb real butter (1 stick)
1/4 cup peanut oil
4 cups hot water
salt and pepper

Salt and pepper the chicken pieces and brown them in peanut oil in skillet!.

While browning chicken, pour rice from a 16oz bag of seasoned yellow rice into a 9x13 baking dish!. quarter 4 tomatoes and set aside!.

Preheat oven to 350 degrees

When chicken is browned (appx 15 mins) place each piece of chicken onto the dry rice burying slightly!. cut 1 stick real butter into 1/2 inch thick pieces and place on the rice around the chicken!. Press tomato pieces into the rice around the chicken!. Pour 4 cups of hot water into baking dish!.(optional, you can substitute 2 cups chicken broth for 2 cups of the water, it adds fat but the dish is a little richer) Put dish in oven on center rack and cook for 1 hour, remove from oven let sit for 10 minutes and serve!.

Here is another easy one

Shepard's Pie

1lb ground chuck
1 can sweet peas
2 cups mashed potatoes (homade is better, Instant is quicker and easier)
salt, pepper and garlic powder
4 slices velveeta cheese

Brown ground chuck in skillet, breaking into small chunks!.
Preheat oven to 350 F
While browning beef prepare mashed potatoes!.
Layer browned beef in 8x8 baking dish and salt, pepper and garlic to taste
Next open can of peas and drain all but about 1/3 of the liquid and pour can on top of beef and spread peas evenly!.
Now spoon mashed potatoes on top of peas and spread like you were frosting a cake!.
Put in oven on middle rack and bake for 30 minutes uncovered!. Open oven and place cheese slices over potatoes and continue to bake just until cheese melts and voila! an all in one meal that is most tasty!. You might want to add toasted garlic bread to the meal!.Www@FoodAQ@Com

Veal and Chicken Parmesan
debone chicken and remove skin
with a meat maillot pound chicken and veal to a very thin thickness
dredge in flour and brown in hot evoo
lay in a baking dish
add pasta sauce (I use Hunts, in the can)
top with mozzarella cheese
sprinkle with grated Parmesan cheese
bake @ 350 for 45-60 min


Pepper Steak
round steak cut into lenghts bite size, browned in a little oil
green peppers cut into strips
onion cut into rounds
garlic to taste or garlic powder
saute' onions and peppers with meat after browned
add beef broth to cover
soy sauce to taste
then simmer 1 hour
thicken broth with cornstarch and cold water mixture to desired consistancy
serve over rice

Breakfast:
Omlett
scramble your sausage (which ever kind she likes, Italian, sage, or mild, or hot)
whip two eggs
pour whipped eggs on sausage
cover
let set then flip over (fold)
*if you want optional ingredients add them prior to folding, cover and finish cooking till eggs is totally set
**optional ingredients depends on what she likes
cheese
onion
green pepper

French Toast
i use french bread sliced thick or texas toast loaf bread
mix 2 eggs, 1 c!. milk, 3T!. sugar, and 2T!. cinnamon, 1 T vanilla
and fry in a little oil or butter, you just want to have enough oil to coat pan, even a spray is better than too much oilWww@FoodAQ@Com

Chicken & Mushroom Bake!.
250g (? lb) Mushrooms, sliced
1 Leek, finely sliced
4 Chicken Breasts!. (thighs or drums)
? t Paprika!.
1 Can 420g (15oz) Creamy Mushroom Soup!.
1T Thyme (fresh-chopped) 1t (dried)
? C Lite Sour Cream!.
Preheat oven to 190C!.(375F)
Place mushroom and leeks in the base of a lasagne style dish!. Add chicken portions and sprinkle with paprika!.
Combine soup mix, ? can of water and thyme and mix well, and pour over chicken!.
Bake for about an hour until the chicken is golden!.
Stir in sour cream and serve!.Www@FoodAQ@Com

one of our new favorites is so simple, and oh so good
chicken, boneless--breast or thighs
taco seasoning in a pouch
cheddar cheese
salsa
sour cream

coat the chicken with the taco seasoning
put in oven proof dish
cover with salsa
bake for 45 minutes
turn off oven
sprinkle with lots of cheddar, when it is melted, take it out

Crock Pot Chicken Cacciatore

1/4 cup Italian salad dressing
3 lb!. whole fryer chicken, cut up into pieces
1 large onion, coarsely chopped
1 green bell pepper, sliced in strips
1 large can crushed tomatoes
1/2 tsp!. garlic powder
1/4 tsp!. salt
3/4 tsp!. thyme

1!. Heat Italian dressing in a large skillet over medium/high heat!.
2!. Add chicken and cook until browned on both sides!.
3!. Meanwhile, place onions and peppers in crock pot!.
4!. Layer cooked chicken over the onion and peppers!.
5!. Combine tomatoes with salt, garlic powder and thyme; pour over top of chicken!.
6!. Cover and cook on LOW for 6 to 8 hours (or on HIGH for 5 hours)!.
7!. Serve over cooked rice or wide noodles!.

Makes 8 or more servings


Bottoms-Up Pizza Bake

1 lb!. roll pork sausage*
1 small onion, diced
1 jar pizza sauce
1 small can sliced mushrooms, drained
? cup green pepper, diced
4 oz!. mozzarella cheese, shredded
? cup all-purpose flour
? tsp!. baking powder
? tsp!. salt
? tsp!. dried basil
? tsp!. garlic power
? cup milk
1 egg, beaten
Cooking spray

1!. Preheat oven to 425 degrees F!. and lightly coat a 9 X 13 inch
baking pan with cooking spray!.
2!. Add onion and crumbled meat to a large skillet!.
3!. Cook over medium/high heat for about 3 minutes or until meat
is browned and onions are tender; drain well!.
4!. Meanwhile, combine flour, baking powder, salt, garlic and basil
in a bowl; using a wire whisk to mix well!.
5!. Whisk in milk and egg until well blended; set aside
6!. Spoon drained meat mixture evenly over the bottom of prepared pan!.
7!. Sprinkle green peppers and mushrooms over top of meat layer!.
8!. Pour pizza sauce over mushroom and green peppers!.
9!. Sprinkle cheese over pizza sauce!.
Spread batter evenly over cheese!.
10!. Bake for 20 minutes or until light golden brown!.
11!. Serve hot from pan!.


Cajun Style Sausage with Beans and Corn

2 Tbsp!. vegetable oil
1 onion, coarsely chopped
1 green pepper, sliced
1/2 lb!. smoked sausage
1 can whole kernel corn, drained
1 tsp!. Cajun seasoning
1/2 tsp!. garlic juice or powder
1 can diced tomatoes, drained
1 can black or pinto beans, drained and rinsed

1!. Heat oil in a large skillet over medium heat!.
2!. Lightly brown sausage in oil!.
3!. Add onions along with green peppers and sauté until tender but not browned; drain all well!.
4!. Stir in corn, Cajun seasoning as well as garlic and continue to simmer for 3 to 5 minutes; stirring occasionally!.
5!. Add tomatoes and beans, cover and reduce heat to low!.
6!. Simmer for 5 to 7 minutes or until thoroughly heated!.


Makes 4 servings


Sausage Potato Stew

1 lb!. smoked sausage or pork sausage links
1 envelope dry onion soup
1 can diced tomatoes
1/4 tsp!. ground sage
1 Tbsp!. maple syrup
2 medium potatoes, peeled and cubed*
1/2 cup water
1 Tbsp!. cornstarch
1 can green beans, drained **


1!. Cut each sausage link into 4 pieces and brown in a large skillet over medium heat; drain well!.
2!. Add tomatoes, dry onion soup, sage and maple syrup; stir well!.
3!. Add potatoes, cover and cook for 15 to 20 minutes or until potatoes are tender!.
4!. Combine cornstarch with water and stir into tomato mixture!.
5!. Continue to cook and stir until thick and bubbly!.
6!. Add green beans, reduce heat to low and simmer for an additional 5 minutes or until green beans are thoroughly heated!.

Makes 6 servings


Almost Home Made Chicken Stew

2 large cans cooked chicken, drained
2 cans diced or crushed tomatoes, undrained
1 can sliced potatoes, drained
1 can French cut green beans, drained
1 can sliced carrots, drained
1 small can sliced mushrooms, drained
? tsp!. instant minced onions
? tsp!. minced garlic
? tsp!. celery seeds
? tsp!. dried rosemary
1? tsp!. dried parsley flakes
1/8 tsp!. black or red pepper
2 tbsp!. all-purpose flour
? cup water


1!. Combine all ingredients except chicken, flour, ? cup of water
and parsley flakes in a large pot or Dutch oven!.
2!. Bring to a boil over medium/high heat!.
3!. Meanwhile, dissolve flour in ? cup of water and stir into stew!.
4!. Continue to cook until liquid thickens to desired consistency;
stirring frequently!.
5!. Add chicken along with parsley and reduce heat to medium/low!.
6!. Simmer stew for about 8 minutes or until chicken is thoroughly heated!.

Makes 6 to 8 servings


SPEEDY CHICKEN A-LA-KING

? cup green pepper, chopped
? cup onions, chopped
? cup celery, chopped
2 Tbsp!. butter or margarine
2 cans cream of chicken soup
2 cups cooked chicken, diced
1 small can sliced mushrooms, drained
Salt and pepper to taste

1!. Melt butter in a large skillet over medium heat!.
2!. Sauté green peppers, onions and celery in butter until tender but not browned!.
3!. Blend in soup, chicken and mushrooms!.
4!. Simmer for 5 to 8 minutes or until thoroughly heated; stirring often!.
5!. Season to taste and serve over toasted bread points or warm biscuits!.


Easy Cajun Chicken and Rice

1 box chicken flavored Rice-A-Roni
1 cup chopped onions
1 cup chopped green peppers
1 can whole kernel corn, drained
1 can diced tomatoes
1? cup water
? tsp!. garlic powder
4 chicken breasts, skinless
1 Tbsp!. Cajun seasoning

1!. Preheat oven to 350 degrees F!.
2!. Combine Rice-A-Roni, onions, green peppers, corn, tomatoes,
garlic powder and water in a 3-quart casserole dish; stir to mix!.
3!. Place chicken on top of rice mixture and sprinkle Cajun seasoning over chicken!.
4!. Cover and bake for 40 to 45 minutes or until rice is tender and
chicken is thoroughly cooked!.
