How can I fix a baked shell?!


Question: How can I fix a baked shell!?
I baked a pie crust because I want to make a lemon meringue pie!. Now, I have to put the filling but the problem is that the crust swelled up and got crisp!. It's just one layer because the bottom is flat!. How can I put the filling and the meringue on this !?Www@FoodAQ@Com

Try brushing the bottom w/ a beaten (not whipped egg white) and bake again for about 5-7 minutes to harden it!. Protect your pretty crust w/ foil so it doesn't get any darker!. This egg white layer should keep your bit of curst from getting soggy too quickly!.

Next time, line your crust w/ parchment or foil, and fill the bottom w/ dry beans or rice!. This prevents it from puffing up like you experienced!.Www@FoodAQ@Com

Next time, you "blind" bake the crust!. Put some foil over the unbaked crust, and pile a bunch of dry beans on it; then bake it and it won't puff up!.!.!.!.!.or PRICK it all over WITH A FORK first!. The filling should probably soften the crust this time though!.!.!.!.!.!.Www@FoodAQ@Com

You're kinda toast on this one!. Next time you blind bake a shell, put a layer of dried beans innit to keep it from puffing up!. You can likely break the puffs you have and scrape/peel 'em off and fill it!.Www@FoodAQ@Com
