Question: What kind of cheese would suit a salad w/ chicken, peppers, onions, olives and a cilantro-lime dressing!?
I was initially thinking goat cheese, but now I think it might not be well suited with the type of salad I'm going for!.

Any suggestions!?

The salad will be fresh greens, with sliced chicken breast, roasted red peppers, onions, and olives, and a homemade cilantro-lime dressing with japelenos!.

with cilantro and jalapenos, you need a Mexican cheese!. A good substitute would be Monterrey Jack or go to the market and ask for a fairly mild Mexican cheese!.Www@FoodAQ@Com

I think cheddar and chicken go together pretty nicely, but if you are looking for something a little more exotic, you might try crumbling some bleu cheese or some Feta cheese over your salad!.Www@FoodAQ@Com
