Question: What chicken or beef dish can I make to go with coconut rice!?
I have a great coconut rice recipe, but it's not the type of side dish you would pair with just anything because it is sweet!. Does anybody have any suggestions/recipes on what to go with it!? Thanks!.Www@FoodAQ@Com

pineapple chicken or jerk chicken, its a great island meal, for the pineapple chicken just marinate chicken breast in pineapple juice and grill, serve it with grilled pineapples, its such a tropical mealWww@FoodAQ@Com

This has a sour flavour that will balance nicely against sweet coconut rice!.

English Style Chicken Banana Curry

1/4 cup vegetable oil
1 onion, chopped
2 tbsp curry powder
1 garlic clove, chopped
1 bay leaf
2 cups chicken stock
1/2 tsp salt
1 granny apple, diced
1/4 cup raisins
1 lb boneless chicken
1 1/2 tbsp all purpose flour
2 ripe bananas, peeled and sliced
2 tbsp freshly squeezed lime juice
1/4 cup chopped parsley
salt and freshly ground pepper

Heat half the oil in a medium saucepan!. Add the onion and cook gently until translucent!. Add the curry powder and cook, stirring, for 5 minutes!. Add the garlic and bay leaf, then slowly add the stock, stirring constantly!. Bring to a boil and boil for 3 minutes!.
Add the salt, apple and raisins then reduce the heat and simmer uncovered for 5 minutes!. While the sauce is simmering, cut chicken into 1 inch pieces, toss in the flour!.
Heat the remaining oil in a large frying pan!. when hot, add the chicken and brown on all sides!. Remove from pan and add to sauce!.
Simmer the sauce and chicken another 10 minutes then add the bananas, lime juice and parsley!. Check the seasoning and serve!.Www@FoodAQ@Com

Caribbean Chicken over Coconut Rice
Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 4

Ingredients
- 4 each boneless, skinless chicken breast halves (about 1 pound total weight)
- 1 tablespoon HERB-OX? Chicken Flavored Bouillon Granules
- 1/2 teaspoon Jamaican jerk seasoning blend
- 1 cup uncooked white rice
- 1 1/2 cups water
- 1/2 cup coconut milk
- 1 teaspoon grated orange peel

Directions
Rinse chicken breasts; pat dry!. In small bowl, combine 1 teaspoon chicken bouillon granules and jerk seasoning!. Rub both sides of chicken breasts with seasoning mixture!. Place chicken on rack of an uncovered grill!. Grill directly over medium coals for 12-15 mintutes or until chicken is cooked through and no longer pink, turning once!. Meanwhile, in saucepan, combine water, cocunut milk, remaining bouillon and rice!. Bring mixture to a boil!. Reduce heat, cover and simmer for 25-30 minutes or until liquid is absorbed and rice is tender!. Stir in orange peel!. Serve chicken over rice!.





CARIBBEAN CHICKEN

2 tbsp!. olive oil
1 c!. onion
2 cloves garlic
4 chicken breasts
1 (16 oz!.) can whole tomatoes
1 (13 3/4 oz!.) can chicken broth
1 3/4 c!. rice
3/4 c!. ham, diced
3/4 c!. water
1 tsp!. basil
1 tbsp!. Tabasco
1 tsp!. pepper

Chop onion and mince garlic!. Brown chicken in oil!. Saute onion and garlic with chicken!. In bowl combine tomatoes, broth, water, spices and Tabasco!. Add to pot, heat to boil, then simmer covered 30 minutes!. Add rice and ham and simmer 20 minutes covered!.








HAWAIIAN BAKED CHICKEN
Yield: 6 Servings

Chicken breasts
2/3 c Flour
2 ts Salt
1 ts Celery salt
1/4 ts Nutmeg
1/4 c Soy sauce
2 tb Sugar
1 tb Cornstarch
1 cn Pineapple chunks in juice; r
1 Onion
1 Green pepper
Reserved pineapple juice

Coat chicken in flour mixture!. Brown in 1/8 inch oil!. Layer skin
side up in baking dish

Combine second set of ingredients!. Bring to boi; pour over
chicken!. Bake under tin foil 45 minutes at 400!.

Saute remaining ingredients in remaining chicken pan's oil; Add
sauted mixture to chicken during the last 30 minutes of bakingWww@FoodAQ@Com

Meatballs:- Curried
1 lb!. ground beef (or other ground meat)
2 tsp!. curry powder
1/2 c!. butter
Freshly ground black pepper
1 c!. stuffing mix
Salt to season to taste
Mix beef, curry powder, stuffing mix, salt and pepper together!. Shape into 32 small balls and sauté in butter over high heat for 5 minutes until brown!. Drain!.Www@FoodAQ@Com
