Much depends on the types of food that they like!. For example, you could make a killer roast only to find out that they don't eat red meat!. Here are a couple of suggestions for you - these are things I cook on a regular basis:

Use thick cut pork chops and marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are!. Serve with smashed potatoes, roasted potatoes or baked potatoes, green beans, applesauce and maybe some gravy!. It is easy, fast and very tasty!.

OR

Baste your pork chops with cherry pie filling from a can, bake at 375 degrees F for 1 hour basting half way through with more pie filling!. They come out very moist and the cherry flavor really compliments the flavor of the pork!.

You can use chicken breasts or pieces instead of pork chops for the above recipes!.

Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots and a good meatloaf is hard to beat!. You can leave out any ingredients that you don't like as long as you keep the meat, egg, bead crumbs and soup mix!. You can also add things that you like - meatloaf can be very versatile!.

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours!.

You could also make a roast such as pork or beef, roast a chicken or a leg of lamb if lamb is something that is liked by everyone!. Sever whatever roast with baked, roasted or mashed potatoes, a steamed veggie and a nice garden salad with lots of fresh veggies topped with shredded/grated cheese, croutons and dressing of your choice!.

Lasagna or pasta and sauce with your sauce made from scratch and containing lean ground beef, a combination of sweet and hot Italian sausage and smoked beef sausage!. Accompany it with crusty bread and a green salad!.

Spaghetti Sauce Italiano

Ingredients
1 pound bulk Italian sausage - use a combination of sweet and hot
1 pound lean ground beef
1 pound smoked sausage - I prefer to use beef
1 cup chopped onion (1 large)
2 cloves garlic, minced
2 14-1/2-ounce cans diced tomatoes, undrained
1 6-ounce can tomato paste
2 4-ounce cans mushroom stems and pieces, drained
2 teaspoons dried Italian seasoning, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chopped green sweet pepper (1 large)
2 ounces each shredded mozzarella and Provolone cheese
2 tablespoons shredded or grated Parmesan cheese
12 to 16 ounces dried spaghetti, cooked and drained
Finely shredded or grated Parmesan cheese (optional)

Directions
In a large skillet cook the sausage, ground beef, smoked sausage, onion, and garlic over medium heat until meat is brown and onion is tender!. Drain off fat!.

Meanwhile, in a 3-1/2- or 4-quart slow cooker or large pot, stir together undrained tomatoes, tomato paste, mushrooms, Italian seasoning, salt, and black pepper!. Stir in meat mixture!.

Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours or simmer on low on the cooktop for a couple of hours!. Stir in sweet pepper and cheeses; simmer until the cheese is melted and incorporated!. Serve meat mixture over hot cooked spaghetti!. If desired, sprinkle with extra Parmesan cheese!. Makes 6 to 8 servings!.

Spicy Tomato-Cream Sauce: Prepare as above, except use hot Italian sausage and stir 1/2 cup whipping cream into sauce just before serving!.

Lasagna

Ingredients
6 dried lasagna noodles
1 egg, beaten
1 15-ounce container ricotta cheese or 2 cups cream-style cottage cheese, drained
1/4 cup grated Parmesan cheese
6 ounces shredded mozzarella cheese
Grated Parmesan cheese (optional)

Directions
Make one recipe of Spaghetti Sauce Italiano!. See above recipe!.

Meanwhile, cook noodles for 10 to 12 minutes or until tender but still firm!. Drain noodles; rinse with cold water!. Drain well; set aside!.

For filling, combine egg, ricotta, and the 1/4 cup Parmesan cheese!. Set aside!.

Spread about 1/2 cup of the sauce over the bottom of a 2-quart rectangular baking dish!. Layer half of the cooked noodles in the bottom of the dish, trimming or overlapping as necessary to fit!. Spread with half of the filling!. Top with half of the remaining meat sauce and half of the mozzarella cheese!. Repeat layers!. If desired, sprinkle additional Parmesan cheese over top!.

Place baking dish on a baking sheet!. Bake in a 375 degree F oven for 30 to 35 minutes or until heated through!. Let stand for 10 minutes before serving!.

Makes 8 servings

Make-ahead directions: Prepare as above through Step 5!. Cover unbaked lasagna; chill for up to 24 hours!. To serve, bake, covered, in a 375 degree F oven for 40 minutes!. Uncover; bake about 20 minutes more or until heated through!. Let stand for 10 minutes before serving!.

Sally's Birthday Salmon


2 lebanese cucumbers
2 cups water
1/2 cup white wine
1 Tbs lime zest
2 sprigs dill, dried works okay about 1/2 tsp
4 salmon fillets
Sauce
1/2 cup good quality egg mayonnaise
2 Tbs grainy mustard
1 Tbs lime juice
salt and pepper



1 Using a vegetable peeler make the cucumber into long wide strips!.
2 Set aside!.
3 Put the water, wine, zest, and dill in a deep frying pan!.
4 Bring it up to the boil!.
5 Reduce heat to a simmer!.
6 Add salmon!.
7 Simmer for 5-6 mins until the fish flakes easily!.
8 For the sauce combine ingredients in a bowl!.
9 Season well!.
10 Serve salmon on a bed of the cucumber, make it look really pretty!.
11 Drizzle with the sauce!.
12 Serve with salad and bread rolls!.


Servings: 4
Preparation time: 5 minutes
Cooking time: 6 minutes
Ready in: 11 minutes

1!.4 kg boneless pork loin
3 Tbs softened butter
100 g finely-chopped prosciutto
2-3 Tbs finely-minced garlic
2-3 Tbs chopped fresh rosemary (or 1 - 1 1/2 T dried)
1-1 1/2 Tbs fresh grated parmesan cheese or shredded parmesan cheese
black pepper
1-2 cup dry white wine



1 Mix together butter, prosciutto, garlic, rosemary, parmesan, and black pepper and set aside (can be made in advance and refrigerated up to one day, but warm to room temperature before proceeding)!.
2 Preheat the oven to 180C!.
3 Cut slits about an inch or so long and a half inch or so deep all over the top of the roast!.
4 Spread butter mixture over the roast, using the handle of a spoon to get it into the slits you made earlier (very important)!.
5 (At this point, you can wrap roast in plastic and refrigerate overnight and up to 1 day!.) Put prepared roast in a roasting pan, pour wine slowly over it, and cook for about 1 1/4 to 1 1/2 hours, depending on the size of the roast, basting about every 30 minutes or so with pan drippings!.
6 Remove from oven, cover with aluminum foil and let rest for about 15 minutes!.

Preparation time: 15 minutes
Cooking time: 1 hour and 30 minutes
Ready in: 1 hour and 45 minutes

Pork and Red Chile Stir-Fry

455 g boneless pork loin, cut into stir-fry strips
5 ml vegetable oil
6 g garlic cloves, crushed
340 g fresh green beans, cut into 2-inch lengths
8 g sugar
10 ml soy sauce
2 g crushed red pepper
2 g grated fresh ginger root
5 ml sesame oil
5 ml rice vinegar

DIRECTIONS
Heat oil in a large nonstick skillet over high heat; add pork strips and garlic and cook and stir until pork is no longer pink, about 3-4 minutes!. Add green beans; stir-fry until beans and pork are tender, about 5 minutes!.
Push the meat and beans to one side of skillet!. Add sugar, soy sauce, red pepper and ginger; stir to dissolve sugar!. Add sesame oil and vinegar!. Stir to coat meat and beans

Asparagus, Chicken and Penne Pasta

448 g dry penne pasta
30 ml olive oil, divided
340 g skinless, boneless chicken breast meat - cut into bite-size pieces
4 cloves garlic, minced
335 g asparagus, trimmed and cut into 1 inch pieces
3 g crushed red pepper flakes
salt and pepper to taste
50 g grated Parmesan cheese

Bring a large pot of lightly salted water to a boil!. Cook pasta in boiling water for 8 to 10 minutes, or until al dente!. Drain, and transfer to a large bowl!.
Heat 1 tablespoon olive oil in a large skillet over medium heat!. Saute chicken until firm and lightly browned; remove from pan!. Add the remaining tablespoon of olive oil to the skillet!. Cook and stir garlic, asparagus, and red pepper flakes in oil until asparagus is tender!. Stir in chicken, and cook for 2 minutes to blend the flavors!. Season with salt and pepper!.
Toss pasta with chicken and asparagus mixture!. Sprinkle with Parmesan cheese!.

Garlic Chicken Stir Fry
30 ml peanut oil
6 cloves garlic, minced
2 g grated fresh ginger
1 bunch green onions, chopped
6 g salt
455 g boneless skinless chicken breasts, cut into strips
2 onions, thinly sliced
90 g sliced cabbage
1 red bell pepper, thinly sliced
360 g sugar snap peas
235 ml chicken broth
30 ml soy sauce
25 g white sugar
15 g cornstarch

Heat peanut oil in a wok or large skillet!. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt!. Stir fry until onion becomes translucent, about 2 minutes!. Add chicken and stir until opaque, about 3 minutes!. Add remaining 4 cloves minced garlic and stir!. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover!.
In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch!. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce!. Serve immediately, over hot rice if desired!.Www@FoodAQ@Com

Laughing Cow Chicken
Just like Chicken Kiev

4 boneless skinless chicken breasts, pounded thin to ? inch
? c seasoned bread crumbs
seasoning salt
4 pieces Laughing Cow Cheese
4 pieces lean ham or proscuitto
Cooking spray
Spray a 13x9 baking pan with cooking spray!. Preheat oven to 400°!. Season chicken with seasoning salt!. Place one piece of cheese and one piece of ham in each chicken breast and roll jellyroll style!. Secure chicken toothpicks and coat with bread crumbs!. Place seam side down in pan!. Sprinkle with a little seasoning salt!. Bake for 35-45 minutes or until done!.
Serves 4

Super Simple Chicken Parmigiana

6 boneless, skinless chicken breast halves, pounded thin (about 1? lb)
2 eggs, slightly beaten
1 c Italian bread crumbs
2 tbsp olive oil
1 jar spaghetti sauce
1 c shredded mozzarella cheese (4 oz)

Preheat oven to 375°!.
Dip chicken in eggs, then in bread crumbs; coating well!.
In a 12 inch skillet, heat oil over medium/high heat and brown chicken; drain on paper towels!.
In an 11x7 baking dish, evenly spread 1 cup pasta sauce!. Arrange chicken in dish, then top with remaining sauce!. Sprinkle with mozzarella; and if desired grated Parmesan cheese!. Bake uncovered 25 minutes or until chicken is no longer pink!.

Serves 6

Chicken Divan

Running short on time!? Stop at the store and pick up a cooked rotisserie chicken to make this meal in less than 45 minutes!.

2 pkg frozen broccoli
1 can cream of chicken soup
1 can cream of mushroom soup
1 ? c chicken broth
1 c mayonnaise
1 c grated cheese
2 tbsp lemon juice
8 chicken breasts cooked, cut up

Cook broccoli until tender, drain, arrange in a buttered casserole dish!. Place chicken on top of broccoli!. Mix soups, broth, mayonnaise and lemon juice!. Pour over broccoli and chicken!. Sprinkle cheese on top!. Bake at 350° for 30 minutes!.Www@FoodAQ@Com

Basil Goat Cheese Pizza this is soooooo good!!!
The flavors compliment each other so well and it is so easy! I use frozen bread dough to speed the process!. Set out dough before you leave for work and you are ready to go by the time you get home

INGREDIENTS
1 (1 pound) loaf frozen white bread dough, thawed
1 tablespoon olive oil
salt to taste
1/2 teaspoon ground black pepper
1 sprig fresh basil, chopped
1 1/2 teaspoons minced fresh rosemary
3/4 cup Italian tomato sauce
4 ounces crumbled goat cheese
2 sprigs fresh basil, chopped


DIRECTIONS
Allow dough to rise in a covered bowl until doubled in bulk!.
Preheat oven to 425 degrees F (220 degrees C)!.
Roll the dough on a floured surface into a 15-inch circle!. Roll the edges towards the center to form a crust, leaving a 12-inch circle!. Brush the entire crust generously with olive oil, and sprinkle with salt, pepper, 1 sprig of chopped basil, and rosemary!. Bake in preheated oven until the crust begins to turn golden, 8 to 10 minutes!.
Spread the crust with tomato sauce!. Sprinkle with 2 sprigs of chopped basil and goat cheese!. Bake in preheated oven until the crust is brown, and the pizza has heated through, about 8 more minutes!.
