For making salsa, is it better if the vegetables have not been refirgerator and got cold?!
I am looking to perfect my salasa recipe, is it better if the fresh vegtables I use dont cool off from refrigoration or not!.Www@FoodAQ@Com

I am a former chef and make mine with fresh veg mainly to limit the sodium content and the flavours I like are stronger and more pronounced!.
One word of advice, I like to make mine with room temp veggies, but with ingredients like onions, cilantro and hot peppers after you finished your going to have to store it in the frig, as they tend to go off the quickest, and while I do use 95% fresh, I add a bit of tinned tomato product, either chopped tomatos or a sodium free tomato sauce, more as a binder and an acid additive with the lime or lemon juice, even vinegar is fine, I can control the salt and heat levels with jalepenos or serrano chilis plus a bit chili powder for the added umphh!.
Make it, let it sit and meld on the counter serve it with tortilla chips or as a condiment, but store the leftovers in the frig it will last 2-5 days!.Www@FoodAQ@Com

Fresh vegetables work in the long run!.!.!.!.!.!.!.refrigerated items aren't usually the best since you go to the grocery store for tomatoes and they get their tomatoes like a week later and plus the travel depending on where you live the salsa usually isn't going to test the BEST!.!.

Salsa is the "dressing" used by Hispanics!. The ingredients can be "cold" "cooled" but never "frozen"!. The BEST results of course is with garden fresh veggies!.

Fresh veggies are always best - if you can get to a farmers market to get the veggies that would be awesome!.
However - if you need wait a day or two - refridgerate
