SAMBAR

Ingredients

* 1/2 cup red lentils, washed and drained
* 2 cups diced vegetables (combination eggplant, cauliflower, green beans, capsicum, tomato)
* 1 tblspn tamarind pulp
* 1 tspn turmeric
* 1/4 cup chopped onion
* chopped coriander (cilantro) to garnish
* Sambar Paste
* 1/4 tspn powdeered fungreek seeds
* 1 tspn red chilli powder
* 1 tspn powdered cumin
* 2 tblspns powdered coriander (cilantro)
* 5 tblspns desiccated coconut
* 2 tblspns powdered yellow split peas
* Tempering
* 1/2 tspn brown mustard seeds
* 2 tblspns ghee (soft clarified butter)
* 1 tspn cumin seeds
* 1/4 tspn fenugreek
* 2 dry red chillies
* few curry leaves


Directions

1!. Cook red lentils in boiling water until soft
2!. Mix the sambar paste ingredients together with the tamarind pulp and turmeric
3!. Add to the lentils along with the vegetables
4!. Cook for a further 15 minutes
5!. Season to taste
6!. In a separate frying pan heat the ghee and add the tempering ingredients
7!. When they crackle, add the onions and saute till clear
8!. Pour the temmpering over the sambar
9!. Garnish with chopped coriander (cilantro)
10!. For a special effect, serve in half coconut shells!. Dressed to impress!
