Does anyone have a tried and true recipe for Ham and Au Gratin Potatoes made with swiss cheese!? (Instead of cheddar)!. Like a scalloped potatoes and ham but with swiss cheese in the sauce!.Www@FoodAQ@Com

Ham and Potato Gratin

5 cups (about 2 pounds) raw potatoes, washed and sliced
2 c ham, diced
1/2 cup chopped green onion tops

1/4 cup unsalted butter
1 small onion,chopped
3/4 cup all-purpose flour
3 1/2 cups half and half
1 teaspoons salt
1 teaspoon ground white pepper
1 cup shredded Swiss cheese

Oven rack to center position and heat oven to 400 degrees F (200 degrees C)!.

Combine potatoes and ham, in a 13 x 9 inch casserole and set aside!.

Melt butter in a pan over medium-high heat!. Add onions and saute until tender and transparent!. Add flour and stir until well blended!. Slowly add cream, whisking constantly!.

Bring to a boil and season with salt and pepper!. Reduce heat and continue to simmer and stir sauce until it is thickened!.

Pour over the ham mixture; toss to coat!.

Sprinkle with cheese Bake uncovered for 1? hours or until potatoes are tender!. Serves 8!.

This can be assembled ahead and baked within 2 days!.

You can also assemble this and freeze it!.

Thaw overnight in the fridge, and bake as directed!.Www@FoodAQ@Com

I found this for you!.!. I would just put in swiss cheese where you need to!. I dont think you have to grate it either just put slices down!.

Potato & bacon au gratin

Preparation Time 25 - 30 minutes

Cooking Time 25 minutes

Ingredients (serves 6)
250g bacon rashers, rind and excess fat trimmed, coarsely chopped
Melted butter, to grease
850g desiree potatoes, unpeeled, thinly sliced crossways
6 green shallots, ends trimmed, thinly sliced
80g (1 cup) coarsely grated cheddar
250ml (1 cup) thin cream
125ml (1/2 cup) chicken stock
2 tsp Dijon mustard
Salt & freshly ground black pepper
Method
Place the bacon on a heatproof, microwave-safe plate between 2 sheets of paper towel!. Cook on High/800watts/100% for 5-6 minutes or until brown!. Remove the bacon from the microwave and set aside for 5 minutes to cool slightly!.
Brush a heatproof, microwave-safe square 23cm (base measurement) ceramic dish with melted butter to lightly grease!. Arrange half the potato slices over the base of the prepared dish!. Cover with 2 sheets of damp paper towel and cook on High/800watts/100% for 4 minutes!. Remove the paper towel and sprinkle with half the bacon, half the green shallots and half the cheese!.
Place the remaining potato slices on a heatproof, microwave-safe plate!. Cover with 2 sheets of damp paper towel and cook on High/800watts/100% for 4 minutes!. Remove from microwave and discard the paper towel!. Use an egg lifter to arrange the potato slices in a single layer over the cheese in the prepared dish!. Top with the remaining bacon and green shallots!.
Combine the cream, stock and mustard in a jug!. Season with salt and pepper!. Pour over the potato mixture!. Cook, uncovered, on Medium/500watts/50% for 6-8 minutes or until the potato is tender when tested with a skewer!.
Preheat grill on medium-high!. Sprinkle top of gratin with the remaining cheese and cook under preheated grill for 2-3 minutes or until the cheese melts and is golden!. Serve immediately!.Www@FoodAQ@Com

any recipe you find that calls for cheddar you can always omit the cheddar and use swiss!.!.!. no big deal!. In the recipe below, just sub swiss for gruyere as called for!.!.!.!. and add about 1-1? cups diced ham to it to make Ham & Au Gratin Potatoes!. Simple!.


Gruyere Potato Gratin

1 pound large red potatoes
3/4 cup coarsely grated Gruyere (about 3 ounces)
1 large egg
3/4 cup milk, heated just to boiling
Salt and freshly ground black pepper

Preheat oven to 400oF!. Butter a 1-quart gratin or shallow baking dish!.
Bring a large saucepan of salted water to a boil!. Peel potatoes and cut into thin slices (about 1/8-inch thick)!. Add potatoes to boiling water and parcook 4 minutes!. Drain potatoes well in a colander!.
In gratin or baking dish, arrange potatoes, overlapping them, in 3 layers, sprinkling first 2 layers each with 1/4 cup Gruyere and salt and pepper, to taste!.
In a small bowl whisk egg and add hot milk in a stream, stirring constantly!. Season mixture with salt and pepper and pour evenly over potatoes!. Sprinkle the potatoes with remaining 1/4 cup cheese and bake until top is golden and potatoes are tender, about 30 minutes!.

Classic Au Gratin Potatoes

The heavy cream and traditional swiss cheese makes this a rich dish a wonderful addition to any holiday feast!.

Ingredients:
1 clove garlic, peeled and slightly crushed with the flat side of a knife
3 lb baking potatoes (about 6 large), peeled and sliced in 1/8 inch thick
rounds
6 oz!. Gruyere or Swiss cheese, finely shredded
1/2 tsp salt
1 cup heavy (whipping) cream

Directions:
