Marinating the meat is crucial and the longer you marinate, the better!. also, marinating will add flavor, but not make the meat softer (and meats cuts used for london broil are hard)!. With a fork, make poke some holes in the raw meat to help break down the connective tissue of the meat!. This also helps the marinate really get in there!.
I like this marinade:
1/2 cup Canola Oil
1/4 cup soy sauce
1 tbsp!. ground ginger
2 or 3 tbsp!. vinegar (plain white vinegar works fine)
2 tbsp!. brown sugar
1 vidalia onion, chopped into very small pieces (you can do this in a food processor, too)!.
Freshly ground black pepper!.
Mix all the ingredients making sure sugar is dissolved!. With fork poke a few holes in meat!. Add meat to marinade and place in ziplock bag!. Refrigerate at least 4 hours, (but preferably overnight)!. Place meat in oven proof dish!. Preheat broiler on high!. Place meat in broiler and cook for 6 to 7 minutes per side!. It is very important not to overcook the meat as this cut is best either rare or medium rare to maintain softness!. Let meat rest outside oven for 10 to 15 minutes before slicing!. Thinly slice steak crosswise and serve with pan juices spooned on top!.Www@FoodAQ@Com

Cut a cross-hatch pattern in the top of the meat!. Marinate it in a zip-lock bag with beer, lime juice, lots of chopped garlic (about 4 or 5 cloves), chili powder, cumin, salt, pepper and some olive oil!. You cannot mess this up!. ;) No measurements needed!. I usually do a regular size can of beer and a palm-full of the spices!. Marinate overnight or for a few hours!. You can grill or broil in the oven!. Make sure you don't overcook!. Medium is about as far as you want to take it considering that a london broil is tuff if fully cooked!.
This recipe is great alone or thinly sliced can make yummy fajitas!. Good luck!Www@FoodAQ@Com

I recommend you pierce it pretty good with a fork, random all over it!. Marinate it in Italian dressing for about an hour!. I put it in a ziploc, that way nothing to clean, just throw it out!. Sometimes when you marinate it to long it gets tough!. You can cook it on the grill or in the oven on broil!. I broil it on low for abt 5 minutes a side and then cut into it to check it!. I rather under cook it and add time to it then over cook it and have shoe leather for dinner!. ha, ha!. Good Luck!.Www@FoodAQ@Com
