It's hard to say without seeing the recipe!. If a cake comes out too dry, it may be over-baked!. Bake until a toothpick comes out mostly clean!. Then cool for 10 minutes and pop it out of the tins (if it's in the hot tins too long, it continues to cook inside)!.

But you can save even a dry cake by spreading a layer of a favorite jam and creamy icing over it!. It will still be great with a glass of cold milk or coffee!.

Another thing you can do is drizzle a little liqueur or simple syrup over it to moisten the cake!.Www@FoodAQ@Com

Are you beating the batter AT LEAST 3 min (closer to 5 min is better) on a stand mixer!? It needs to beat that long to get enough air incorporated into the batter, for a moist & fluffy cake !.!.!.!.!. Make sure that your flour is sifted (or at least not packed down) when you measure it - you might be getting too much in there !.!.!.!.!. Substitute sour cream or yogurt for any water or milk that's called for in the recipe!.!.!.!.!.!.Www@FoodAQ@Com

Most scratch cakes come out dry!.!.!.Trust me, I've been doing this for years!.!.!.Maybe it's because we don't have all that trans fat that they use in bakeries!.!.!.!.Your're not doing anything wrong!

Our cakes are healthier, albeit dry!.!.!.Make a scratch icing, it will remedy the effect somewhat!.!.!.or, make a whipped cream
frosting and decorate with canned peachers, fresh bananas, blueberries any berries!.!.!.!.watch the cake disappear!.Www@FoodAQ@Com

You need to use real butter, also try adding a pack of instant jello pudding mix the small box!. Play with the recipe a little adding less sugar or more moist ingredients!.Www@FoodAQ@Com

I use apple sauce in place of the oil!.Www@FoodAQ@Com
