The Best Scrambled Eggs!.!.!. (better than IHOP)

Crack the eggs into a bowl and add a tsp warm water for every egg
Beat with a good French-style whisk until lightly frothy
Melt 1 tsp butter in a good nonstick skillet over medium high
Swirl butter around to coat skillet
Give eggs a last good beating and pour into pan
Immediately add a little salt and pepper to taste
Turn burner down to medium
Every time you see a good 1/4 inch layer of cooked egg forming, gently move it aside to let the raw egg touch hot surface
When eggs are half cooked, gently stir breaking it into lumps
When 3/4 of the eggs are cooked, stir one last time
Cover and remove from heat
Let sit for a minute or two

It is crucial that you do not overcook your scrambled eggs!. Season again to taste before you serve!.

PS- when I make this for my kids I stir in cheese when the eggs are 3/4 cooked, I leave it on the burner for another 30 seconds (to compensate for cooling it with the cheese) then stir it one last time, cover and remove from heat!.Www@FoodAQ@Com
