This is a bit fiddly, but it is the best version of solo eggs!. In Scotland, these are known as “drappit” eggs!.
Serves 1
INGREDIENTS
2 eggs*
500ml of water
1 teaspoon of vinegar
METHOD
Break the eggs into 2 cups and pick out any bits of shell!.
Put the water and vinegar in a saucepan on a medium heat!. Bring to the boil, then turn down the heat until it is just boiling (simmering)!.
Slide the eggs out of the cups into the water!. They should hold together, although there will probably be some white froth on the surface, which should be scooped off!. If the eggs appear to be sticking to the pan, wait until they are fairly well cooked before trying to dislodge them!.
The eggs are ready when the white is just solid!. The yolk should then still be runny!. This takes about 2 or 3 minutes!.
Fish the eggs out with a spoon!. If the white is still a bit runny, put the egg back into the water and continue to cook for a little bit longer!.
If any hot water has become trapped in any bubbles in the white, burst them with a fork and drain it off!.
ADDITIONS & ALTERNATIVES
Serve on 2 slices of hot buttered toast!.
TIPS

Get pasta sauces in the jars!. Cook different pastas - enough for just one - and then spoon in some of the pasta sauce!. You can also add things like a small can of vegetables or just warm it up and eat it on the side!. I like marinara sauce and 4-cheese alfredo sauce!. First, if you have access to a freezer, absolutely try to cook some things, eg!. pasta sauce, in bulk, and freeze in individual or double portions so you can just defrost and heat them later!. (Tesco sell small, eg!. 300ml, plastic containers for something like €1!.49 for a 3-pack!. You should be able to find something similar at your local, biggest, cheapest supermarket)!.
A super-easy pasta sauce is just emptying a can of chopped tomatoes into a pan and heating, add salt, pepper, a few dried herbs, and bingo!. Learn to taste as you go - you'll soon get the hang of what you like!. Only ever add tiny amounts of salt and pepper, and keep adding until you like what you taste!. Basic herbs/spices to buy would be basil, oregano, thyme, chilli!. also worth buying onions and garlic, v good for your general health (if you're trying to eat on a budget you'll probably miss out on a few nutrients)!. If using onions and garlic in a pasta sauce (tastes WAY better, and adds a little texture), chop them up fairly small (I'd use half an onion and 5 cloves of garlic if I was just cooking for myself, but I like a fair bit of both)!.

Peel or scrub (lots of nutrients in skin), cut into eighths, place in a pot with lots of cold water and add a heaped teaspoon of salt!. Put on stove, put lid on, turn heat up to high!. When it starts bubbling over, take the lid off and turn the heat down to low for a minute then replace lid!. Will take around 7 minutes to boil, check with a fork until it's soft!. When cooked, you could toss with butter, or mash with butter, milk, and a dash each of salt and pepper!. If you make several servings at once, you could leave some in the fridge and use in several ways:
Pot pie: Use a small oven-proof dish (or even cook this in the microwave in a bowl)!. Put leftover cooked meat (eg!. Monday you cook a couple of chicken legs, eat one, save the meat from the other and chop into small bits), pad it out with frozen veg (I like plain peas, but you could use mixed, very very cheap), and with instant gravy poured over the top (VERY important kitchen staple, made to packet instructions)!. Spread a few spoonfuls of mashed potato on top and put in the oven for half an hour to heat up, or in the microwave for a few minutes until hot - somehow, this seems so much more interesting than having mashed potato night after night!.
OR you could make potato cakes out of leftover mashed potato - make sure the potato is fairly stiff (eg!. don't add milk when mashing it) so it sticks together, leave overnight in fridge, get a couple of handfuls and roll into big balls, then flatten so they look like big potato biscuits!. Melt butter in medium heat in a frying pan and, once sizzling, add potato cakes!. Cook over medium heat until crispy-gold on bottom, then add more butter to pan (this is not for the heart-healthy) and flip and cook the other side!.
Sausages are great when you're cooking for one - when you buy them, open the packet and divide them up into single servings (wrapped in clingfilm) to freeze, so you can just microwave them quickly to defrost!. Bung them under the grill for 7 minutes (turning a couple of times so they're brown all over) or fry quickly in the pan!.
Or put a pan of pasta on to cook - while it's cooking, heat a little oil (preferably olive) in a pan, add some diced (small pieces) onion and garlic and a bit of chilli (and dried parsley if you've got it, it just looks pretty), then add a couple of sausages!. And maybe a little salt and pepper!. Cook until the sausages are done, then take the sausages out!. Add a (small) splash of water to the pan and scrape around to pick up all the bits of flavouring!. Leave it on the heat to bubble while you cut the sausages up into bite-size pieces!. Return them to the pan, drain the pasta REALLY THOROUGHLY, and add it to the pan with the sausages!. Stir it all up and serve immediately!.
Roast veggies (great for snack or just gorge yourself for a full meal): 1 big potato!. 2 big carrots!. 1 big parsnip!. Peel!. Cut potatoes into wedges - in half lengthways so you have 2 halves that are longer than they are thick!. Cut into wedges about 1cm (1/3 inch) thick!. Cut carrots and parsnip into strips approx!. 1cm thick as well!. Place all veg in a pot big enough to hold them with some room to spare!. Add lots of cold salted water (enough to cover them and then some), put a lid on, put on the stove and bring to boil!. (while they're cooking, turn the oven on to high, and put a roasting pan with a big dollop of olive oil in it inside)!. Once they're boiling, take the lid off and keep an eye on them - you want to take them out just as they get tender (just as a fork can push a bit into them)!. The parsnips will cook first (about 5 minutes after boiling), so pull them out with a fork!. By then the potatoes should be ready to go!. Once the potatoes are out, give the carrots 2 minutes longer, then pull them out too!. Give all the veg a minute to steam and dry out a bit!. Take the hot roasting pan out and tip all the veggies into it - it'll sizzle nicely!. Toss the veggies really quickly in the oil, coating them, then sprinkle with lots of paprika and chilli (and garlic powder and onion powder if you have it) and a fair bit of salt and pepper too!. Toss them all around a bit more to get the flavourings all over, then chuck the pan back in the oven!. Leave it for 20 minutes, then check on them!. They might be ready, or you might need a little longer!. If it's a bit longer, shake them around in the pan a bit, then give them another ten minutes!. Enormously filling and very cheap!
