Blueberry Muffins


12 1/2 ounces cake flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch salt
1 cup sugar
1/2 cup vegetable oil
1 egg
1 cup yogurt
1 1/2 cups fresh blueberries
Vegetable spray, for the muffin tins

Preheat oven to 380 degrees F!.
In a large bowl sift together the flour, baking soda, baking powder, and salt and set aside!.

In another large bowl, whisk together the sugar, oil, egg and yogurt!. Add the dry ingredients reserving 1 tablespoon of the dry ingredients and toss with the blueberries!. Stir mixture for a count of 10!. Add 1 cup blueberries to mixture and stir 3 more times!. Reserve the 1/2 cup of blueberries!.

Using a #20 ice cream scoop, add the mixture to greased muffin pans!. Sprinkle the remaining 1/2 cup of berries on top of muffins and press down lightly!. Place into the oven and increase the temperature to 400 degrees!. Bake for 20 to 25 minutes, rotating pan halfway through!. Remove from oven and turn out, upside down on tea towel to cool completely!. Serve immediately or store in airtight container for 2 to 3 days!.Www@FoodAQ@Com

My favorite is a toss-up!.!. I like strawberry, blueberry, and corn muffins!. However, I am particular about corn muffins; they must be perfectly sweet!. Some people just don't make corn muffins the way I like them!. So, ultimately my #1 favorite would be a tie between strawberry and blueberry, both of which you can google recipes for!. also, you don't have to get a recipe, you can just go to the grocery store and buy a box of muffin mix!.Www@FoodAQ@Com

Ingredients

Muffin Batter
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup sugar
3 tablespoons vegetable oil
1/2 cup buttermilk
1 egg
4 mashed banana
1 teaspoon vanilla
2/3 cup chopped walnut
Crumb Topping
1/2 cup flour
1/4 cup sugar
1 dash salt
3 tablespoons butter flavor shortening
1 tablespoon mashed banana
Directions
1 Preheat oven to 350°F Grease or line 12 muffin tins with paper liners!.
2 Prepare the crumb topping: In a small bowl, whisk together flour, sugar and salt!. Cut shortening into flour mixture until it resembles coarse crumbs!. Larger crumbs are a bit more desirable!. Stir in the mashed banana and set bowl aside!.
3 Prepare the batter: In a medium bowl, sift together flour, baking soda, baking powder and salt!. In a large bowl, whisk together sugar, vegetable oil, buttermilk, egg, bananas and vanilla!. Pour flour mixture into banana mixture and stir until batter is just combined!. Spoon into muffin tins, filling each 2/3 full!. Top each muffin with crumb mixture, dividing it evenly!.

BANANA PECAN MUFFINS
3/4 cup chopped pecans
2 cups flour
1 Tbsp!. baking powder
? tsp!. salt
1 stick butter, softened
? cup brown sugar
2 eggs
1 ? tsp!. vanilla
1 ? cups mashed ripe bananas (about 3)

Preheat oven to 375 degrees!. Grease muffin tins or line with paper cups!.

In bowl, combine foure, baking powder and salt!.

In another bowl, cream butter, sugar, and vanilla until smooth and creamy!. Beat in eggs one at a time!. Add mashed bananas and beat until combined!.

Stir dry ingredients into banana mixture just until flour disappears!. Lightly stir in nuts

Spoon batter into muffin cups to the top!. Bake 20 - 25 minutes, until toothipck comes out clean!.

Old Fashioned Banana Muffins
An old fashioned recipe for moist and delicious banana muffins!. This is a family favorite, great for brunch, coffee hour or bake sales!.
1/2 cup butter or margarine
1 1/2 cups brown sugar (I use less about 1 1/4 cups)
1/2 cup buttermilk (OR 1 1/2 teaspoons vinegar and milk to make 1/2 cup!.)
1 teaspoon baking soda (to be added to buttermilk)
2 eggs, separated (place yolks in small bowl, in larger bowl beat egg whites to stiff peaks)
1 cup mashed bananas
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
STREUSEL TOPPING
1/4 cup brown sugar
3 tablespoons flour
2 tablespoons butter or margarine
18 servings

1!. In small bowl prepare streusel topping by combining sugar and flour, cut in butter and set aside!.
2!. In bowl, measure flour, baking powder and salt; whisk to mix and set aside!.
3!. Separate eggs, yolks in small bowl, whites beaten to stiff peaks in a larger bowl; set aside!.
4!. Cream together butter and sugar in large bowl until light and fluffy, add egg yolks and vanilla extract mixing to blend!.
5!. Add baking soda to the buttermilk, add to batter mix!.
6!. Stir in mashed bananas!.
7!. Add dry ingredients stirring until mixed, gently fold in the stiffly beaten egg whites!.
8!. Fill greased or paper lined muffin cups two thirds full, topping with a sprinkling of the streusel topping mix!.
9!. Bake in a 350 degree oven 20- 25 minutes or until golden brown; this varies from oven to oven!.

Banana Chocolate Chip Muffins

Ingredients-
2 cups all-purpose flour
1/3 cup white sugar
2 tablespoons Dutch process cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
2/3 cup canola oil
1 egg, beaten
1 cup semi-sweet chocolate chips


Preparation-
In a large bowl combine the flour, sugar, cocoa powder and baking powder!.
In another bowl, blend the bananas, oil and egg together!. Add to dry ingredients, mixing just until blended!. Fold in the chocolate chips!. Spoon the batter into a greased muffin pan, filling three-fourths full!.
Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes!. Remove the muffins to a wire rack to cool completely!.Www@FoodAQ@Com

carrot/orange muffins

2 cups self raising flour!.
1 cup sugar
1/2 cup olive oil
2 eggs
1 grated carrot
zest of one orange
3/4 cup milk

whisk the wet ingredients and combine with dry ingredients until mixture just comes together!. put into muffin tins and bake for 15-20 mins in a moderate oven or until a skewer comes out clean!. Let cool and top with!.!.!.

Orange flavoured butter icing!.
Segment an orange and finely dice add to

Ginger Muffins, I haven't got a recipe, but it is a general muffin mix with powdered ginger, and as you add the batter to the muffin pan you add a few small chunks of Crystallised (candied) ginger!.Www@FoodAQ@Com

Peach-Nectarine Muffins --Very Good! Handed down to me from grandma!

INGREDIENTS
3 cups all-purpose flour
1-1/2 cups white sugar
1 teaspoon salt
1 tablespoon and 1 teaspoon baking powder
2/3 cup vegetable oil
2 egg
2/3 cup milk
2 large ripe peach - peeled, pitted and diced
2 very ripe nectarine, pitted and diced
2 tablespoons brown sugar



DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C)!. Grease 8 muffin cups or line with paper muffin liners!.
In a large bowl, combine flour, sugar, salt and baking powder!. Add vegetable oil, egg and milk; mix well!. Fold in diced peach and nectarine!. Fill each muffin tin to the top with muffin mix!. Sprinkle a little brown sugar onto the top of each uncooked muffin!.
Bake in preheated oven for 18 to 20 minutes!. Check muffins regularly after 15 minutes of baking!. Serve warm or cool!.



Addictive Pumpkin Muffins

INGREDIENTS
1 1/2 cups raisins
4 3/4 cups all-purpose flour
1 cups white sugar
2 cup brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
/2 teaspoons nutmeg
4 teaspoons cinnamon
1 1/2 teaspoons ground cloves
6 eggs
1 (29 ounce) can pumpkin
1 cup unsweetened applesauce
1 cup chopped walnuts



DIRECTIONS
Preheat oven to 350 degrees F (175 C)!. Grease three 12 cup muffin pans, or line with paper muffin liners!. Soak raisins in hot water for ten minutes to plump, then drain!.
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and ground cloves!. In a separate bowl, mix the eggs, pumpkin, and applesauce, until smooth!. Add this mixture to the dry ingredients and stir thoroughly to make a smooth batter!. Stir the raisins and walnuts into the batter!. Spoon batter into the prepared muffin cups!.
Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean!.



Apple Lemon with Cinnamon Muffins

INGREDIENTS
2 cups all-purpose flour
4 teaspoons baking powder
1 pinch salt
1/2 cup sugar
2 eggs, lightly beaten
10 tablespoons butter
2 tablespoon lemon zest
3 teaspoon lemon juice
1 cup milk
1 large Granny Smith apple - peeled, cored and chopped
1 tablespoon sugar
2 teaspoon ground cinnamon


DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!. Grease 12 muffin cups!.
In a bowl, sift together the flour, baking powder, and salt!. In a separate bowl, cream together the 1/2 cup sugar, eggs, butter, lemon zest, lemon juice, and milk!. Mix the creamed ingredients into the flour mixture until evenly moist!. Fold in the apples!. Spoon into the prepared muffin cups!.
Mix the 1 tablespoon sugar and cinnamon, and sprinkle over the tops of the muffin batter!.
Bake 15 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean!. Cool 1 to 2 minutes before turning out onto wire racks to cool completely!.



Banana Muffins with a Crunch -- Yummy!!!!!

INGREDIENTS
3 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, lightly beaten
3/4 cup milk
2 teaspoons vanilla extract
1 cup melted butter, cooled
2 bananas, mashed
1 banana, chopped
1 cup granola
1 cup chopped walnuts
1 cup shredded coconut
1/3 cup banana chips (optional)



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Line 24 muffin cups with paper liners!.
In a bowl, mix the flour, sugar, baking powder, baking soda, and salt!. Mix in the eggs, milk, vanilla, and butter!. Fold in mashed bananas, chopped banana, granola, walnuts, and coconut!. Scoop into the prepared muffin cups!. Sprinkle with banana chips!.
Bake 25 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean!.



Date Flecked Orange Muffins


INGREDIENTS
1 thin skinned orange, cut into eighths and seeded
1 egg
1/2 cup buttermilk
1 cup chopped pitted dates
1/2 cup butter
1 3/4 cups all-purpose flour
3/4 cup brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 teaspoon ground cloves
1 teaspoon ground ginger



DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C)!. Grease muffin cups or line with paper muffin liners!.
Place orange pieces into the blender with the egg, buttermilk, dates and butter!. Blend thoroughly until mixture is thick, fairly smooth with flecks!. Pour out into a large mixing bowl!.
In a separate bowl, stir together flour, sugar, baking soda, baking powder, salt, cloves and ginger!. Stir flour mixture into the orange mixture and stir or fold gently with a wooden spoon or spatula only until dry ingredients have combined!. Don't mind any lumps that may be present!. Fill muffin tins to just under rims with batter!.
Bake in preheated oven for 20 minutes, until a toothpick inserted into center of muffin comes out clean!. Let stand in pan for five minutes, then remove to wire racks for cooling!.Www@FoodAQ@Com
