Scallops can be eaten raw, but they will need to be extremely fresh, so you'll need to trust your supplier!. If your serving them raw try slicing them as finely as possible as this is a little easier on the palette!.
If your cooking them they should be fairly rare anyway, there's nothing worse than an overcooked rubbery scallopWww@FoodAQ@Com

Yeah I eat raw scallops all the time, especially on sushi!. Theres no issue with freshness, because if there alive then there fresh, test them, poke them with something if the shell snaps shut then there alive if it stays open then its dead and you don't eat it!. Undercooked is also fine because their fresh, Only if you kill them beforehand like yesterday and cook them today, should you fully cook them!.Www@FoodAQ@Com

Scallops are wonderful for Ceviche!. Chop some garlic, onions and cilantro, put them in a little olive oil and fresh lime juice!. If you like it spicy, add some jalepeno!. Put in your scallops and salt and pepper, let marinate for an hour or so, stirring occasionally!. Serve as is with sliced avocado!.Www@FoodAQ@Com

Any time you eat 'raw' seafood you risk getting parasites!. I 'do' eat raw fish at times though!. I don't know where you live, but if your not on a coast chances are you are not getting 'fresh' seafood!. The trawlers that catch the fish are very often 'self contained' factories that freeze and package the products 'right on the ship'!. Any fish you get at the local store or walmart has been frozen!. My point, I wouldn't eat fish that is not cooked unless I knew it was fresh!.
As for cooking, cook very quickly!. It only takes 3 min!. or so!. I heard a funny chef once quote the 3 min!. - 3 hour rule!.!.!. "if you cook it more than 3 min!. you'll need to cook it 3 hours to make it tender!."Www@FoodAQ@Com

If they are fresh absolutely!. I usually cook my scallops medium!. I have been to my favorite fishmonger when the boat came in with a haul of fresh scallops and had them raw, delicious! But obviously I knew where they came from and who caught them!.Www@FoodAQ@Com

Yes, raw only in a seviche ( a citric acid ) marinade, like lemon or lime juice, that actually "cooks" the scallops!. Otherwise, they are best undercooked, or just cooked, as are shrimp!.Www@FoodAQ@Com
