Answers:
Allison,
If I were fixing this for you, I would use 2 onions, cut in larger pieces, not diced, but larger than XXXXXXXXXXXX(this),
same with the pepper!. I would add 2 cans of kidney beans and leave out the chickpeas!. Canned corn is OK!. I would double the amount of chili powder and add a heaping teaspoon of cumin, if available, and use only 1/2 c of water!.

This will make about 2 quarts of vegetarian chili!.

Anything I make is yummy!.

Add cumin!.

Forget Zucchini!. It makes dishes sour!.

Canned corn is fine!. Hominy is also good!.

Some folks might add a little celery!. (I don't like)

Garnish with cilantro!.Www@FoodAQ@Com

I would forget the carrots (but that's just me), cumin and cilantro are a good idea and maybe either add rice (then you'll need more liquid, maybe chicken broth) or serve over rice!.Www@FoodAQ@Com

I would ad potatoes!.!.!.!.!.!.!.!.plus they will help thicken the soup
I think it will feed 6-8 if you add the potatoes especially
SOunds good if you season it right!Www@FoodAQ@Com

It sounds good, and the frozen corn will be fine!.!.!.!.!.you might want to add some chopped fresh cilantro, and cubed tofu would be good too!.!.!.!.!.!.!.It should make enough for about 6 peopleWww@FoodAQ@Com
