How long in advance can I make gingerbread?!


Question: How long in advance can I make gingerbread!?
My sister has asked me to make gingerbread men/girls for her wedding as bonbonierre, however, as I am also making the wedding cake & am chief bridesmaid I need to know how soon in advance I can make the gingerbread to avoid me having a breakdown!.

I was thinking I would do them a week before but don't know if the icing would make them go yucky!?

Any help would be appreciated as I am not a fan of gingerbread so have no experience with it!Www@FoodAQ@Com

Gingerbread is one of those things that gets better with time!. A week is fine, HOWEVER, don't frost them first as they will def go soggy!. also, you can freeze them and they will store up to a month!. Thaw the night before and frost that morning!. Or the day before should be fine!. Just don't frost any earlier than that!.Www@FoodAQ@Com
