I'm going to answer your question, and I hope that I do NOT offend anyone with my answer!.
You will NOT learn that kind of cooking from any cookbook!. A cookbook will provide you with recipes and instructions only!. What you really need to do is this: Go find you a older black lady, go to flea markets, rural areas, or even the poorer section's of town (like I said, no insult intended) and you sit down and talk to this black person!. If you ask her for guidance and help in understanding 'soul' cooking, she will provide you with more information then 10 cookbooks combined!. If you really want to learn 'soul' cooking that is just about the only way to do actually learn and be able to do it right!. There is no cookbook that can give you the knowledge that a older black person who has been cooking for years can give you!. Don't be afraid to approach and ask your question, their friendliness and help may just surprise you!.Www@FoodAQ@Com

Most southern or soul food isn't healthy from the content to the method of preperation!. Most meats are fatty & fried!. But you could try to google soul food then adjust the content to a healthier fare!.Www@FoodAQ@Com
Um!. Well, you are certainly not politically correct with your use of "Black" but if you want to learn to cook soul food, a good website to start with is southerncooking!.com!.Www@FoodAQ@Com
Go to your local library or charity shops selling books!. They almost certainly will have books on Jamaican and African and Carribean cookery!. Good luck!. I love it!.Www@FoodAQ@Com
