Question: Why does the breading fall off my veal cutlets when I fry them!?

You aren't doing the breading properly!. My husband was a professional chef for 15 years, and he breads all different kinds of meat, and all of the breading stays on!. Mix 1/4-1/2 cup milk (depending on how much meat you want to bread) with one egg !.!.!. whip it up well!. Dip the meat into flour, then into the milk and egg, then into the breading!. That way, the breading is sticking to the egg/milk, which is sticking to the flour, which is sticking to the meat!. I don't know why, but this method actually uses less breading, and the tiny bit of flour used is not going to cause a high raise in calories, and there is very little milk and egg!. When you try breading with JUST the breading, you usually use twice as much breading as you really need, and 75-90% falls off !.!.!. so use the steps: flour, milk/egg, breading, and your veal cutlets will be PERFECTLY breaded!.Www@FoodAQ@Com

1) dry them
2) then dip in seasoned flour
3) then into egg wash
4) finally into seasoned breadcrumbs
5) let them rest for about 10 minutes
6) then fry them until done
*when you put them in the pan do not move,let the crust develop!.
*do not over crowed the pan this will steam not fry that might be the problem^!.

Dip them in the egg and crumbs and then do it again!. Then what I do is put them on a cake cooling rack for at least an hour!. More is better!. I usually do it a few hours before I am going to cook them!. That gives the egg and crumbs a chance to dry out a bit!. Mine always stay on when I do this!.Www@FoodAQ@Com

I agree with the rest of the answers on the egg/milk/flour!. But also wanted to add that the breading will fall off if the oil is not hot enough no matter what method of breading you use!.Www@FoodAQ@Com

Dip meat in beaten egg first!. A good idea is to pat dry with a paper towel before dipping!. also
firmly press the breading
onto the meat!.Www@FoodAQ@Com

mayonnaise is the best!. season the mayo with season=all!. coat the meat then bread it!. You can even do double coating, that makes it crispier!.Www@FoodAQ@Com

try letting them rest before putting them in the fryer!. or make your breading smaller etc!. if your veal is to wet- not using egg batter dry them off before breading themWww@FoodAQ@Com

do you dip your veal in egg before you dip them in the breading!? egg helps the breading to stickWww@FoodAQ@Com
