Is the top of the asparagus to be eaten only? The bottom part doesnt seem very good?!
How is it usually served in restaurants!? Do they cut the bottom part off !?

if you want to consume the rubbery part you have to cook it much longer than the tips or cook it separately!.Www@FoodAQ@Com

I always snap the tough ends off the bottom of the asparagus stem!. How much depends upon how fresh it is!. But even asparagus that I pick that day, since I cut it off from the soil with a knife needs to be "snapped"!. Put the spear between your 2 thumbs and just push up with your thumbs until it snaps!. Then the top with stem is ready to steam or grill or roast!
Restaurants serve it the same way as I do other than they probably use a knife so it's faster to cut off the tough ends!. My problem with that is you can't tell from looking at it how much to cut off so you either cut to much or too little!. Asparagus needs to be peeled and trimmed!. When you trim it, cut the hard ends off!. Usually about 2 inches!. If you want the tips, obviously, cut higher!.Www@FoodAQ@Com
You can eat the woody lower stem portion if you use a vegetable peeler to peel the heck out of them until the smooth green flesh is visible!.Www@FoodAQ@Com
