An 18# Pork Roast!?!? not a Ham!?
Even shoulder is not that big unless the Boston Butt is still attached, and that is pushing it!.

The best way to dry out pork is to cut it up!. Bake it whole until it becomes easy to tear or slice!.!.Www@FoodAQ@Com

The best thing to do is cut it in half and weigh each portion!. If they are no more than five pounds each, check out these easy and yummy glazed pork roast recipes:

I would cut it into two pieces!. A pork roast that size will take 8 hours or more to cook!. It is way too big!. It is the size of a ham, and raw!
