Butter cream Icing?!


Question: Butter cream Icing!?
So i took a cake decorating class and for about 1 1/2 years I have been decorating cakes!. I love it!. I have made multiple cakes in the past 11/2!. I ran across this show that has given me some conflicting info!. I was talk the Wilton method that you decorate your cakes with stiff Icing or so I thought!. Stiff is also used for roses and some flowers!. Medium is used for borders and thin is for writing!. I thought I was paying attention!. So for all you cake decorators, what is your advice,Www@FoodAQ@Com


Answers:
If you're using the Wilton recipe, add about two tablespoons of corn syrup to the icing to thin it to a spreading consistency to put it on the cake!.

If your icing is too stiff, it will just pull up crumbs from the cake and make a mess!.

If you already have figured out what works for you, then don't worry that you're doing the wrong thing because of what you've seen on a cooking show!. There are many ways to do most things, and just because it's right for someone doesn't mean that your way is wrong!.!.!.also, cake decorating will vary a little bit by area!. In some areas it's too hot and humid to do things exactly the way that they describe in the wilton books!.

Ok the other answers are just crappy so I thought I would add something!. If you are making a formal cake with the decoration and writing on it, then yes, you need to have a harder icing so you have a good basis to decorate on!. However, because it is easier, most people will ice a cake with soft icing like butter cream!. Some people prefer the taste too - but for me I like all icings! It just depends what taste and look you are going for, that's all!. (also how long you want the cake to last!.!.!. a stiff icing will help keep a cake a lot longer than a butter icing!.)Www@FoodAQ@Com

I am a cake decorator who uses medium icing I have tried the stiff but it seems to always cause me problems, so I only use the stiff for roses and other drop flowers!. I guess you just try different kinds and before you know it you will find out which one you like the best because you will find yourself making that particular one almost every time!. Butter cream icing is delicious!. Cakes are for eating!. I do not like stiff icing!. Better that the cake taste good, be moist and have really good icing than look beautiful and taste crappy, as most highly decorated cakes are!. But that is my opinion!.

* 1/2 cup solid vegetable shortening
* 1/2 cup butter or margarine, softened
* 1 teaspoon Vanilla Extract
* 4 cups sifted confectioners' sugar (approx!. 1 lb!.)
* 2 tablespoons milk
