The Original Caesar Salad

If you skip the anchovies, add salt!. If you use fewer eggs, add more oil!. The egg ratio goes like this: one person, one egg; two people, two eggs; three people, two eggs; four people, three eggs; five people, four eggs!.

8 fillets of anchovies
2 small lemons
1 to 2 tablespoons minced garlic
2 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
3 eggs, coddled for 1 minute
4 pearl-size dabs of mustard
1 tablespoon Worcestershire sauce
5 to 6 tablespoons freshly grated Parmesan cheese
1 cup croutons
3 medium heads of romaine lettuce, chilled, dry, crisp, edges trimmed
Freshly ground pepper to taste

In large wooden bowl, place anchovies, juice from the 2 lemons, and garlic!. Mash with a fork to a smooth paste!. Alternatively, mix these ingredients in a food processor or blender!.

Add oil, vinegar, eggs, mustard, Worcestershire sauce, and cheese!. Mix well with fork!. Add croutons and romaine lettuce leaves to dressing!. Toss!. Transfer salad onto plates!. Serve with freshly ground pepper to taste!. Serves 4!.Www@FoodAQ@Com

Kittencal's Famous Caesar Salad --

Ingredients
1 large head romaine lettuce (washed over and thoroughly dried)
4 cups large-size garlic-flavored croutons (or to taste, see Kittencal's Garlic Croutons)
parmesan cheese
freshly grated black pepper
DRESSING
2 anchovy fillets (or to taste)
2 fresh garlic cloves (or to taste)
1 cup mayonnaise (not salad dressing Hellman's is best)
1/4 cup half-and-half cream or milk
1/3 cup grated parmesan cheese
2 tablespoons fresh squeezed lemon juice
1 tablespoon Dijon mustard (Hellman's Dijonnaise is best!)
salt and pepper
2 teaspoons worcestershire sauce (or to taste) (optional)
buttermilk or half-and-half, for thinning


Directions
1) In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients)!.
2) Add in the remaining ingredients, and process for 30 seconds, or more until well mixed!.
3) Adjust seasonings to taste!.
4) Thin with buttermilk (or milk) for a thinner consistency if desired!.
5) Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time)!.
6) Toss desired amount of dressing with Romaine lettuce and croutons!.
7) Sprinkle with more grated Parmesan cheese if desired!.

Although I do like the traditional Caesar salad, I actually prefer my dressing creamy and I have experimented a bit with my own flavors and you could add more garlic or less, omit the anchovies, which are not really traditional!.

1 to 2 cloves of peeled garlic
1 egg yolk
1/4 cup grated Parmesan cheese
2 to 4 anchovy fillets
1/2 TBS of Dijon mustard
3 TBS lemon juice
1 cup olive oil
Salt and pepper to taste

In a food processor, process garlic and add parm, anchovies, lemon juice, mustard and egg yolk, process until smooth!. With processor running, very slowly drizzle in the olive oil until the dressing emulsifies or combines to make a smooth mayonnaise consistency, salt and pepper to taste!.

You may use a pasteurized egg yolk sold in the dairy if you are worried about salmonella!.

I toss with torn romaine lettuce and top with freshly toasted croutons!. Enjoy

For a good in a pinch dressing sold in retail shops, I prefer Ken's Creamy Caesar Dressing, I toss with a bit more parm and croutons!.Www@FoodAQ@Com

1 loaf day old Italian bread
3 garlic cloves, mashed
9 tablespoons extra virgin olive oil
1/4 teaspoon plus 1 pinch kosher salt
2 eggs
2 heads romaine lettuce, inner leaves only
7 grinds black pepper
1 lemon, juiced
6 drops Worcestershire sauce
1/4 cup grated Parmesan cheese

Heat oven to 350 degrees!.
Cut 1/2 to 3/4-inch croutons from the loaf of bread and place on a baking sheet and put into the oven until dry but not browned!.

Use a mortar and pestle to mash the garlic with 4 tablespoons of oil and 1/4 teaspoon kosher salt!. Strain the oil into a skillet over medium heat!. Add the dried croutons and fry, tossing constantly until all of the oil is absorbed and the croutons turn gold!. Set aside!.

Bring 2 cups water to a boil in a small saucepan!. Add the eggs and cook for 1 minute!. Chill in ice water to halt cooking!. Set aside!.

In a very large bowl, tear lettuce and toss with 3 tablespoons of olive oil!. Sprinkle with the remaining kosher salt and the black pepper!. Add the remaining olive oil!. Toss well!. Add the lemon juice and Worcestershire sauce!. Break in the eggs!. Toss until a creamy dressing forms!. Toss in Parmesan cheese and serve with croutons!.Www@FoodAQ@Com

Well, obviously the salad part is shredded romaine leaves!. You can add croutons if you like, but if they aren't homemade, I skip them!.


Caesar Dressing

? cup EVOO
2 Tbsp!. Dijon mustard
2 Tbsp!. lemon juice
? cup red wine vinegar
1 egg, optional
1? tsp!. minced garlic
1? tsp!. anchovy paste
1? tsp!. Worcestershire sauce
Salt and freshly grated black pepper to taste

Mix well and store in fridge at least 3 hours for best flavor!.
