Easy and quick lunchtime meal? Recommendations?!

Question: Easy and quick lunchtime meal!? Recommendations!?
I have been eating healthily for around 6 months, not just to lose weight but to lower my blood pressure too!.
I eat a good breakfast and snack on fruits, etc!.
However, I always have a "bad" lunch!. In the office, I usually eat a salad from the canteen - but it has lots of toppings and I know that I should just eat plain salad!.

I have now decided to travel a few miles back home from my office so I can cook a better lunch (and save money!)!.

My question is:
What are some meals I could cook, that are both quick and easy!?
( I have around 15-20 minutes cooking time, and I am not that skilled in the kitchen!)!. I also like most foods, but not peppers or anything too spicy!.

Thanks very much!.Www@FoodAQ@Com

Answers:
Bring your lunch to work!. Here are some ideas:

If you grill chicken or bake chicken for dinner, throw on an extra piece for your lunch the next day!. Slice it overtop of a bed of lettuce and add a pinch of low fat shredded cheddar cheese, tomatos, black beans, and some scallions!. Then bring a low fat dressing on the side, and bring a big bottle of water!.

You can bake a potato the night before and put it in the fridge in a tupperware container!. Then steam some brocolli the night before and put it on top of the potato!. Then put some lowfat cheddar cheese in a baggie, and some low fat or fat free sour cream in a baggie!. Microwave the potato and brocolli at work and then add your toppings!.

Another way to use grilled or baked leftover chicken is to make some lettuce cups!. Get a head of bibb or boston lettuce!.!.!.even romaine would work!. Peel off the layers so each leaf is like a little cup!. Chop the chicken and mix it with a little low fat mayo, a tsp or so of dijon mustard, some raisins, a sprinkle of curry powder, and some almonds!. Put a tablespoon of the chicken salad on each lettuce leaf, and enjoy!. Very healthy and filling that way!.

All the best!Www@FoodAQ@Com

Bring your lunch from home!. You can bring your own salads w/ healthy toppings, make a low-fat chicken or tuna salad (use LF mayo or LF yogurt instead of regular mayo), eat that on wheat crackers or wheat bread, bring fresh fruit from home, bring leftovers (homemade stews, soups, baked chicken, whatever you have at night!.!.!.!. just put yourself a serving up for lunch when you make your dinner plate)!.Www@FoodAQ@Com

I only have a short time for lunches too, I tend to eat things such as fish and salad, or poached eggs, cous cous is also good!. Either that or cook more than you need in the evenings and then freeze it for following days or eat leftovers!. www!.bbc!.co!.uk/food is good for recipe ideas, you can search by event, chef, ingredients etc!.Www@FoodAQ@Com

Please do not call it a'canteen'!.
I know not who 'runs' said

all 'canteens' have dietry (!?) needs
catered for!.
If you are quite large i suggest /a eating less!.
Lunch,(after the danish for breakfast !)
have a light soup & no bread !
Maybe a a packet of buscuits to
take off the 'edge'!.Www@FoodAQ@Com

Make Sandwiches, Wraps, or Paninis and have them with baked chips!.
Have leftover grilled steak or chicken or fish to put on a sammie, or to make your own salads!.
I love Lean Cuisines and have them with a side of steamed veggies or side salad!.Www@FoodAQ@Com

Cream of tomato soup made with skim milk, and half a grilled cheese sandwich!. Maybe a side of sliced tomatoes or a small salad!. This is the way to go and low in calories!.Www@FoodAQ@Com
