Question: I'm thinking of making a variation of chicken cordon bleu!.!.!.!?
This weekend on an episode of 30 minute meals (Rachel Rae) She made a variation of chicken cordon bleu, it was stuffed with bleu cheese and wrapped in bacon!.!.!. I would like to do something similar only since I don't like bleu cheese, I thought I could 'stuff the chicken with creamy spinach and then wrap it in bacon!. My question is!.!.!.as far as the spinach, should I cook it before I stuff the chicken or will it cook while in the oven!? I guess my concern is if I cooked it first and then put it in the oven, would the spinach be over cooked!? Any suggestions would be greatly appreciated!.Www@FoodAQ@Com

i stuff chicken with thawed frozen spinach (fresh is fine dont cook it though ) drain all liquid out of spinach!. stuff in middle of chicken - i add procuttio and mozzerella to spinach mixture!.
i pan fry to get golden brown then i finish in the oven!.
another version is to buy deli ham and swiss and take thin sliced chicken cutlets lay 1 slice ham and 1 slice of cheese on top!. roll it up and stick toothpick in it to keep it closed!. dip in egg and bread crumbs and fry until golden brown!. i buy pre made alfredo sauce and serve on topWww@FoodAQ@Com

I would use frozen spinach, thawed, drained and squeezed!. If you used fresh, you would need alot because it would shrink way down once it's cooked!.Www@FoodAQ@Com
