Answers:
I keep it simple and that is when it tastes the best!. I shred some chicken, add some garlic power, some celery salt (I don't care for fresh celery in my salads), some season salt, fresh ground pepper, light mayo, and a scoop of sour cream!. Just be a little light handed when using so many salt products - you don't want to ruin the flavor with it being too salty!. Some times I will even add a touch of cumin or Tabasco if I want more of a spicy/mexican taste!.Www@FoodAQ@Com

Chicken-Strawberry Salad

2 tablespoons orange juice

1 tablespoon olive oil or salad oil

2 teaspoons sugar

1/4 cup soy sauce

2 green onions, thinly sliced (1/4 cup)

2 tablespoons orange juice

1 tablespoon lemon juice

1 clove garlic, minced

12 ounces skinless, boneless chicken breasts

4 cups spinach leaves

1 cup sliced fresh strawberries

1 11-ounce can mandarin oranges, drained



Directions

Dressing: In a screw-top jar combine 2 tablespoons orange juice, the oil, and sugar; cover and shake well!. Chill dressing until serving time!. For marinade, combine soy sauce, green onions, 2 tablespoons orange juice, the lemon juice, and garlic!. Place chicken in a plastic bag set into a shallow dish!. Add marinade; seal bag!. Turn chicken to coat well!. Chill 2 to 4 hours, turning chicken occasionally!. Remove chicken from bag, reserving marinade!. Grill chicken on an uncovered grill over medium coals for 5 minutes!. Brush with marinade; turn chicken and brush with marinade!. Grill 7 to 10 minutes more or until chicken is tender and no longer pink!. Cool slightly; slice chicken breast!. Discard any remaining marinade!. Line 4 individual plates with spinach leaves!. Arrange strawberries, oranges, and chicken breast slices on spinach-lined plates!. Shake dressing; drizzle over salads!.

This chicken salad makes a delicious luncheon salad served on lettuce leaves with sliced avocado, or fill sandwich rolls with the mixture!.

Ingredients:
2 cups diced chicken
1/3 to 1/2 cup mayonnaise
2 tablespoons sour cream
1 cup seedless green grapes, sliced
3 green onions, with some green, thinly sliced
1 rib celery, thinly sliced
1/2 cup walnut pieces
1/4 teaspoon salt
Dash pepper
1 tablespoon lemon juice
1 teaspoon honey, or to taste
Salad greens, optional
Shredded raddiccio, optional
Sliced avocado, optional

Preparation:
Combine the diced chicken with 1/3 cup mayonnaise, sour cream, sliced grapes, sliced green onions, sliced celery, walnuts, salt, pepper, and lemon juice!. Stir in the honey and more mayonnaise, if needed!. Serve the chicken salad mixture on salad greens and raddiccio and garnish with sliced avocado!. For sandwiches, line sandwich rolls with lettuce leaves and fill with chicken salad!.

Jamaican Jerk Chicken Salad

Ingredients:

* 1/2 cup prepared or purchased honey-mustard dressing
* 1 teaspoon finely grated lime zest
* 4 chicken breast halves without skin, boneless
* 1 tablespoon Jamaican jerk seasoning
* 2 large fresh mangoes
* 10 to 12 cups mixed greens

Preparation:
Stir together honey-mustard dressing and lime zest!. Cover and chill dressing while preparing chicken!.

Rinse chicken and pat dry; sprinkle with the jerk seasoning In a large skillet cook the seasoned chicken in hot oil over medium-high heat about 6 minutes on each side until browned and no longer pink!. Thinly slice each chicken breast!.

Arrange warm chicken and mango atop greens on four plates; drizzle with the honey-mustard dressing!.

Everytime my mom makes this chicken salad, everyone asks her what she put in it, or where she bought it!. Its a favorite at every party!. and its sooo simple!.
Boiled potatoes (mashed)
Frozen peas and carrots (boil)
Mayo
Chicken (little strips, maybe cut in squares!.!.)
Add some salt and black pepper for more taste,
I usually add Chicken broth too, to make it less dry!. ;)

4 or 5 chicken breasts (boiled and cooled)
6 eggs (boiled and cooled and peeled)
2 tsp spicy brown mustard
1 cup mayo
1/2 cup relish
1/2 onion diced
salt and pepper to taste

Mix altogether and serve either warm or put in the fridge for about an hour!.
