HillBilly Cake

1 1/2 cups sugar
2 eggs
1/2 cup melted butter
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 can (20 ounces) undrained crushed pineapple
(The pineapple can be sweetened or unsweetened)
1 cup light brown sugar (For Cake Topping)
1 cup chopped walnuts (For Cake Topping)

Mix ingredients together and pour into a greased (and floured) 9 x 13 baking pan!. Top with the light brown sugar and the chopped walnuts!. Bake at 350 F!. for 40 minutes!.

1 can of fruit cocktail, drained (Use juice for something else)
1 envelope of Dream Whip

Whip the envelope of Dream Whip!. Add in the drained fruit cocktail!. Combine together until mixed!. Eat and enjoy!.

Layered Banana Pudding Dessert


A layered banana pudding dessert recipe with vanilla wafers, vanilla pudding, bananas, strawberry gelatin, and whipped topping!.
INGREDIENTS:
1 cup vanilla wafer cookies, crushed
1 package vanilla pudding mix (cook and serve), 3 ounce
2 ripe but firm bananas
1 package strawberry-flavored gelatin powder, 3 ounce
1 cup whipped topping or sweetened whipped cream
PREPARATION:
Spread half the crushed wafers in the bottom of a buttered 8 x 8-inch square pan!. Prepare pudding mix according to package directions; spoon hot pudding over crumbs!. Slice one banana; arrange over pudding!.


Top with remaining crumbs!. Chill for 1 hour!. Meanwhile, prepare gelatin according to package directions; chill for 30 minutes or until partially set!. Pour over crumbs!. Berry Angel Delight

It's the berries - and the angel food cake - that create this impressive, easy dessert!.

Prep Time:15 min
Start to Finish:4 hr 15 min
Makes:10 to 12 servings

Ingredients:
1 cup whipping (heavy) cream
2 tablespoons sugar
2 cups Yoplait? Thick & Creamy vanilla yogurt (from three 6-ounce containers)
1 round angel food cake (8 inches in diameter), cut into 1-inch pieces
1 cup fresh blueberries
1 cup quartered fresh strawberries
1 cup fresh raspberries

1!. In chilled medium bowl, beat whipping cream and sugar with electric mixer on high speed until stiff peaks form!. Gently stir in yogurt!.

2!. Place cake pieces in large bowl; gently stir in yogurt mixture!. In medium bowl, gently mix berries!.

3!. Spoon half of the cake mixture into 9-inch springform pan; press firmly in pan with rubber spatula!. Top with half of the berries!. Repeat with remaining cake mixture; press with spatula!. Top with berries!. Cover and refrigerate at least 4 hours or overnight!.

4!. Run metal spatula carefully along side of dessert to loosen; remove side of pan!. Cut dessert into wedges!.

use the best coffee you can!. if you want it more decadent you can use kahlua instead!. you should find ladyfinger in the cookie isle!. usually on the very top or very bottom shelves!. marscapone cheese can usually be found in the 'gourmet' cheese section or near the cream cheese!.

Easy Tiramisu

3 egg yolks
1/4 cup white sugar
2 teaspoons vanilla extract
1 1/8 cups mascarpone cheese
24 ladyfingers
1 1/2 cups brewed coffee
1 tablespoon unsweetened cocoa powder

In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow!. Fold mascarpone into yolk mixture!. Set aside!.

Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish!. Spread half the mascarpone mixture over the ladyfingers!. Repeat with remaining cookies and mascarpone!. Cover and chill 1 hour!. Sprinkle with cocoa just before serving!.Www@FoodAQ@Com

With all of the luscious berries in season, how about a free form berry tart!. You can use a premade pie crust or make your own crust!. Use any mixture of fresh berries, blueberries, black berries, raspberries or strawberries, that have been washed and tossed with about 3 to 4 tablespoons of sugar!.

Preheat the oven to 375 F

Melt 1 cup of apricot jam in a heavy sauce pan, add 4 tablespoons of sugar and 1 TB of lemon juice, cook over low heat until melted!. You may also add 1 to 2 tablespoons of Gran marnier!.

Roll your pastry sheet on a floured surface into a large oval about 1/8 inch thick !. Fold dough over gently and transfer to a sheet pan, lay dough out flat and brush the bottom of the dough with a bit of the melted jam mixture and lay the berry mixture on top of the dough leaving a 2 inch margin around the circumference of the dough!. Roll the edges of the pasty over the outer edges of the berries and press to seal, pleating the dough as you go around the tart!. Sprinkle the tart and berries with about 2 tablespoons of sugar!. Bake for 30 to 35 minutes until the pastry is lightly browned!. When the tart is cooled down a bit, warm the glaze and spoon over the top of the tart!. I personally would go for something light and sweet to go with all the heavy and salty foods you described!.

An easy relatively cheap option is a sorbet!.

Heres one using watermelon, although any fruit juice could be substituted!.

* 1 cup sugar
* 1/2 cup water
* 1/4 cup lemon juice
* 3 cups watermelon

Bring the sugar and water to a boil until sugar is completely dissolved!. Allow this mixture to cool in the refrigerator while dicing and de-seeding the watermelon!.

Puree or simply smash the watermelon until is is smooth, and combine all ingredients into a shallow pan and place in the freezer, unless an ice cream maker is available!.

After ice crystals begin to form, stir the mixture roughly every 15-20 minutes until completely frozen!. While spooning out the sorbet you should drag the spoon or scoop across the top of the sorbet lightly to ensure nice smooth scoops!.Www@FoodAQ@Com

Hot Apple Sauce ( would function as side and dessert )
roughly chop some granny smith apples (peeled and cored)
add a dash of cinnamon n nutmeg
add a few tbsp brown sugar
add 1/8 tsp cayenne pepper
bake until apples are tender!.
