Best ricotta cheese substitute?!


Question: Best ricotta cheese substitute!?
Right now I'm making a cannoli fillin, except I don't have ricotta cheese!. What is the best substitute!? Thanks! When I finish (or if I finish) I hope it tastes good!Www@FoodAQ@Com

Cottage cheese is a good substitute in savory dishes like lasagna or stuffed pasta!. I think you will be really disappointed if you use it in sweet cannoli filling!. It's salty and the texture is a little too wet!. I think you really need ricotta for cannoli!.Www@FoodAQ@Com

i agree with everyone, cottage cheese is the best, except, you're gonna wanna let the water drain off like in a mesh strainer!. also if you have a food processor, handy chopper type thing, puree the cottage cheese so that it have the smooth texture of ricotta cheese!. good luck!!!!Www@FoodAQ@Com

use cottage cheese and push it through a potato ricer or put it into a food processor and pulse 4 times then pour the cottage cheese into a flour towel and squeeze all the moisture you can out if it by twisting in the towel!.Www@FoodAQ@Com

Yes, well drained cottage cheese is a good substitute in most dishes calling for ricotta but with cannoli, I would go with something a bit sweeter like cream cheese or preferably Mascapone <sp!?> cheese!.
