you just go for it! start slo, with tiny knife strokes!. once it's off you can't put it back!.
a crumb coat is when you put a thin layer of frosting on a cake, and let it harden/set (i put it in the fridge to speed it up)!. the reason for this is that all the crumbs from the cake come through the frosting!. so when it hardens, you can put the final thick layer of frosting on without out getting it full of ugly crumbs!

A crumb coat is a thin layer of icing you frost the cake with first!. Make a very thin coat of icing (water it down with milk) and frost your layers first!. I use an icing spatula, then with each strike on the cake, I wipe the 'crumby' icing (that comes off on your spatula) into a coffee cup so it does not get into your main batch of icing!. When you have it completely thinly iced, put it in the fridge to set this layer!. Then you go back and frost the cake regularly, and the crumbs should be trapped in the first layer!.
A neat idea for a castle cake is to use whatever pan you have, then invert frosted cupcakes on top for 'towers' around the base cakes top edge!. When you slice the cake, you can remove the 'towers' and serve them first, no cutting needed!. Then slice the cake regularly!.Www@FoodAQ@Com

Nordicware makes a great Castle cake pan - I know you can find it at Williams Sonoma!.!.!.!.!. But, you can use a firm cake (pound cake is good), and freeze it!. That will make it easy to carve with a serrated knife (or buy Sara Lee frozen pound cake)!. !.!.!.!. Crumb coat: when the cake comes out of the oven, brush all the crumbs off!. Use a little frosting to put the layers together, then cover the sides & top with a very thin layer of frosting and let it sit about 10 min!. That will seal the crumbs in, so they won't show on the real frosting layer!.!.!.!.!.!.!.Www@FoodAQ@Com
I just had to respond, We called my mother "Mom-Mom" too!. Whatever you decide to do, start with a very cold cake!. This will hold up better when cutting!. The crumb coat refers to the outside crumbly part that you want to dust off!. This sounds like a huge undertaking, and you probably should search the web for detailed instructions!. Good luck!!Www@FoodAQ@Com
crumb coat = once you take your cake out of the oven, let it cool down, coat the entire cake with frosting!. all the little bread crumbs will stick to this 1st layer of frosting, so your 2nd or 3rd layer of frosting will be free of bread/cake crumbs
