If you have it, use Cool Whip or homemade whipped cream!. You can still make Butter Cream Frosting by making your own powdered sugar - just measure 2 cups of granulated sugar in to your blender or food processor and blend until powdery!. If you do not have a blender or a food processor, place the sugar in a Ziploc bag and crush with a rolling pin!.

Meringue Frosting Start to Finish: 25 minutes
Ingredients
1-1/2 cups granulated sugar
1/3 cup cold water
2 egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla

Directions
In a 2-quart top of a double boiler combine sugar, water, egg whites, and cream of tartar!. Beat with an electric mixer on low speed for 30 seconds!.

Place the pan over boiling water (upper pan should not touch the water)!. Cook, beating constantly with the electric mixer on high speed, for 10 to 13 minutes or until an instant-read thermometer registers 160 degrees F when inserted in the mixture, stopping beater and quickly scraping bottom and sides of pan every 5 minutes to prevent sticking!. Remove pan from the heat; add vanilla!. Beat about 1 minute more or until frosting is fluffy and holds soft peaks!. This frosts tops and sides of two 8- or 9-inch cake layers or one 10-inch tube cake!. Store frosted cake in the refrigerator and serve the same day it is made!.

Makes about 5 cups

Butter Cream Frosting

2 sticks of butter, softened
2 cups powdered sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
3-4 tablespoons milk

With an electric mixed whip butter until creamy; add powdered sugar, lemon juice and vanilla!. Combine until well mixed!. Add milk by the tablespoonful until desired constancy is reached!.

For chocolate:

Melt 2 squares of semi-sweet baking chocolate and add to the sugar butter mixture before adding milk!. Then add milk by the tablespoonful until desired constancy is reached!.

By using lemon juice you eliminate the need for salt and it also cuts down on the sweetness of the frosting - I have been doing it this way for years and everybody loves my frosting!.
