How do you use a cedar board for cooking salmon on the grill?!
Answers:
Soak planks in sink for 1!.5 to 2 hours!.!.!.!.do not oversoak!.
Set your gas grill to medium!.
Toast the plank approx 5 minutes on each side to where the plank is slightly brown on each side!. Then close the lid again for 5-8 minutes!.!.!.you will begin to hear the wood pop!. Then you know the plank is ready for the fish!.
Add the skinless and spiced Salmon!. You can add Salmon with skin on but it is harder to remove from the plank!. Be sure that the plank is centered!.
Cook for only 15 minutes tops!. I usually go 12 minutes!. If you cook the Salmon for 30 minutes like one of the above answerer advised, then you will be eating DRY SALMON!. I would imagine that anybody who advises 30 minutes on Salmon also likes their steaks burnt and/or well done!.
IMPORTANT: Keep a spray bottle full of water handy to spray any flame ups and do not leave the grill unattended!. For best results stay at the grill throughout the grilling process!. By the time you are ready to remove the Salmon, you should see the edges of the plank with burning embers!.Www@FoodAQ@Com

Recipe courtesy Steve Raichlen
Show: BBQ with Bobby Flay
1 cedar plank (6 by 14 inches)
2 salmon fillets (1 1/2 pounds total)
Salt and freshly ground black pepper
6 tablespoons Dijon mustard
6 tablespoons brown sugar
Soak cedar plank in salted water for 2 hours, then drain!. Remove skin from salmon fillet!. Remove any remaining bones!. Rinse the salmon under cold running water and pat dry with paper towels!. Generously season the salmon with salt and pepper on both sides!. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides!. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard!.
Set grill for indirect grilling and heat to medium-high!. Place the cedar plank in the center of the hot grate, away from the heat!. Cover the grill and cook until cooked through, around 20 to 30 minutes!. The internal temperature should read 135 degrees F!. Transfer the salmon and plank to a platter and serve right off the plank!.
Cook's Note: A direct method to grill the salmon may be used!. Soak the cedar plank well!. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank!. Set up the grill for direct grilling on medium-high!. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes!. Turn the plank over and place the fish on top!. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F!. Check the plank occasionally!. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill!.Www@FoodAQ@Com

Soak your plank in the sink!. Fill your sink full of water, and place a can of soup on top of the plank so it doesn't float away! After about 2 hours you can be assured your plant is really wet!. Next place food on the plank, and place plank over your open fire (either camp style or bbq grate) as the wood heats up it starts to smoke and cook your food!. You will need to flip steaks, pork, etc at least once while cooking, but do not flip fish! Yes the wood will catch on fire! Keep a squirt bottle near by for extreme flare ups!. You don't want to char the food so try to keep a moderate flame under the plank!. Good luck!Www@FoodAQ@Com
Put it right up on the grill and keep the lid closed!. I worked at a restaurant that served "Cedar Plank Salmon" and the board was just put in the hearth oven right next to the flames!. It should be fine and delicious!.Www@FoodAQ@Com
