This was a great success!.EAT AS YOU GO!. outside 2 types of Crisco butter and regular flavor A beer batter !. A deep fryer We did this many times with another couple!. cut up veggies,cauliflower,sliced zucchini and small mushrooms and good slices of a mild fish like cod!.When you start with the butter flavor the veggies pick up the flavor as that goes away and you get to the fish add some regular Crisco!.Www@FoodAQ@Com

ZUCCHINI PANCAKES
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/8 teaspoon dried oregano
salt and pepper to taste
1 1/2 cups shredded zucchini
1 egg, beaten
2 tablespoons chopped onion
2 tablespoons mayonnaise
2 tablespoons butter
sour cream, optional

Combine the flour, Parmesan cheese, oregano, salt and pepper!. Combine the zucchini, egg, onion and mayonnaise; stir into dry ingredients until well belended!.
In skillet, melt butter!. Drop zucchini mixture by cupfuls into skillet; press lightly to flateten!. Fry until golden brown, about 2 minutes on each side!. Drain on paper towels!. serve with sour cream if desired!.

Baked Zucchini Gratin:
1 medium onion, sliced
2-3 lbs!. zucchini or yellow squash, sliced
1 stick butter/margarine, melted
2 cups mozzarella cheese
1/2 cup bread crumbs
1/4 cup Parmesan cheese
Salt, pepper, and thyme to taste

Preheat oven to 350 degrees!. In a greased casserole dish, layer onion and zucchini and season with salt, pepper and thyme!. Pour a little of the melted butter over this layer!. Sprinkle with some of the mozzarella and Parmesan cheese!. Mix together bread crumbs and remaining butter and layer over the cheese mixture!. Sprinkle with remaining cheese and bake for 35-40 minutes until zucchini is fork tender!.Www@FoodAQ@Com

BEST ZUCCHINI BREAD EVER!

Ingredients

* 3 eggs
* 2 cups sugar
* 2 cups shredded zucchini
* 1 cup vegetable oil
* 2 teaspoons vanilla
* 3 cups flour
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 2 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1/4 teaspoon clove
* 1/2 cup chopped nuts
* 1/2 cup raisins (optional)

Directions

1 Preheat oven to 325* and grease bottom only of two 9 x 5 bread
2!.Beat eggs until foamy!.

3!. Stir in sugar, zucchini, oil and vanilla!.

4!. Combine dry ingredients and spices and gradually add to wet ingredients!.

5!. Fold in nuts and raisins!.

6!. Pour into prepared pans!.

7!. Bake for 60 to 80 minutes or until center tests done!.

8!. Cool for 10 minutes on rack and then remove from pans!.
9 Cool completely on rack before slicing

Fried Zucchini, dip in egg, then dip in seasoned flour and deep fry!. On the grill, split down the middle, spread butter on it, season it, then put back together and wrap in foil and grill!. ZUCCHINI PATTIES WITH FETA - ROCK MY WORLD!!

2 1/2 cups coarsely grated zucchini (from about 3 medium)
1 teaspoon salt, divided
1 large egg
1 large egg yolk
1/2 cup (or more) all purpose flour
1/2 cup crumbled feta cheese
1 cup chopped fresh Italian parsley
1/2 cup chopped green onions
1 1/2 tablespoons chopped fresh dill

1/2 cup (about) olive oil
1/2 cup (about) corn oil

Plain Greek yogurt PreparationToss zucchini and 1/2 teaspoon salt in large bowl!. Let stand 5 minutes!. Transfer to sieve!. Press out excess liquid; place zucchini in dry bowl!. Mix in egg, yolk, 1/2 cup flour, cheese, and 1/2 teaspoon salt!. Mix in parsley, onions, and dill!. If batter is very wet, add more flour by spoonfuls!.

Heat 2 tablespoons olive oil and 2 tablespoons corn oil in large skillet over medium heat!. Working in batches, drop batter by rounded tablespoonfuls into skillet!. Fry patties until golden, 5 minutes per side, adding more olive oil and corn oil as needed!. Transfer to paper towels!. DO AHEAD Can be made 1 day ahead!. Place on baking sheet, cover, and chill!. Rewarm uncovered in 350°F oven 12 minutes!. Serve with yogurt!.Www@FoodAQ@Com

zucchini parmesan!.!.!.make it the same way you would make eggplant parm!.!.!.just use zucchini!. You can salt the zucchini for half an hour before making it just like you would eggplant to make it less watery!. To reduce the salt!.!.!.!.rinse it!.!.!.!.throw it in flour then egg then breadcrumbs and pan fry it!. Cover with sauce and cheese and melt under the broiler!. Yum!Www@FoodAQ@Com

Slice em up!.!.fry em in canola oil (just a little bit) and sprinkle with some corn meal!.!.

Fried Squash or Zucchini!.!.

Or you could boil the zuchini in a pan with some brown rice, add a little cream of mushroom soup and serve under chicken breast!.!.Www@FoodAQ@Com
