Classic Cornbread

1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1 cup milk or buttermilk
1/4 cup cooking oil or shortening, melted, cooled

1!. Sift together flour, cornmeal, sugar, baking powder and salt!.
2!. Add eggs, milk and oil or melted shortening!. Beat until just smooth-do not overbeat!.
3!. Turn into a greased 9x9x2 inch baking pan!. Bake in a 425: oven for 20-25 minutes!.
4!. Can add drained corn, bacon, finely chopped jalapeno peppers etc!. for a different taste!.Www@FoodAQ@Com

* 3 ounces butter, melted
* 2 cups whole milk
* 6 ounces white cheddar cheese or regular cheddar cheese, grated

* 16 ounces creamed corn (or 12 ounces creamed corn and 8 oz fresh corn)
* 1 cup fine cornmeal
* 2 tablespoons fine cornmeal
* 1 cup all-purpose flour
* 2 tablespoons all-purpose flour
* 2 tablespoons granulated sugar
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* honey (optional)

Heat oven to 350*(325* convection oven, fan on)!.

Heat 12" cast iron skillet in oven until it is quite hot, 10-15 minutes!. When hot, oil pan with vegetable oil or cooking spray!. (for less thick bread, batter is enough for two 12" skillets)!.

In large bowl, combine eggs, butter, milk, cheese, sour cream and corn; mix well!.

Mix together the cornmeal, flour, sugar, salt and baking soda!. Add to the milk mixture and stir until well combined!.

Pour batter into hot pan!.

Bake unitl golden brown on top and batter is "set," about 25 minutes!. The cornbread may seem wet or moist, but will be somewhat firm to the touch!. Let it cool in the pan, the residual heat will finish cooking the bread!. (Sometimes it's done enough to eat straight from oven, when bottom is crustiest!)!.

To serve, reheat in pan and loosen bread while hot with butterknife around the egdes and turn out onto warm plate!.

Mom's Southern Golden Cornbread

1 cup yellow cornmeal
1 cup all-purpose flour
2 to 4 tablespoons sugar (I use 3)
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil

1!. Preheat oven to 425 degrees and grease or use cooking spray, an 8 inch baking pan!.
2!. In a large bowl combine cornmeal!. flour, sugar and salt!.
3!. Add milk, egg, and oil!. Beat until fairly smooth, about 1 minute!.

Southern Style Cornbread

1 beaten egg
1 1/3 cups milk
1/4 cup oil
2 cups Self-rising Corn Meal

1!. Preheat oven at 450 degrees!.

2!. Grease 9” ovenproof skillet or 9” square pan!.

3!. Place in oven to heat!.

4!. Combine all ingredients in a large bowl!.

5!. Mix well

6!. Pour batter into greased pan and bake for 20-25 minutes!.


Buttermilk Corn Bread

1 cup yellow cornmeal
1/3 cup all-purpose flour
1 tsp!. baking powder
? tsp!. salt
? tsp!. baking soda
1 egg, beaten
1 cup buttermilk or soured milk*


1!. Preheat oven to 400 degrees F!. and grease a 9 inch square pan!.
2!. Combine all the dry ingredients in a small bowl!.
3!. Add the egg and buttermilk stirring until just blended!.
4!. Pour batter into prepared pan!.
5!. Bake for 20 minutes of until golden brown!.
6!. Cool for 5 minutes in pan before turning out onto a plate!.


* To make sour milk add 1 tsp!. vinegar to 1 cup milk and let stand for
5 minutes before using!.



Country Style Cornbread

2 cups Self-rising Corn Meal
? cup oil
1 ? cup buttermilk or milk

1!. Preheat oven to 450 degrees!.

2!. Grease 9-inch ovenproof skillet or 9-inch square pan before placing in oven to heat!.

3!. In large bowl, combine all ingredients; mixing well!.

4!. Pour batter into greased pan and bake for 20-25 minutes or until golden brown!.


Mexican Corn Bread

3 cups Self-rising Corn Meal
3 tablespoons sugar
1 teaspoon salt
1 ? cups grated cheddar cheese
1 cup oil
1 large onion, chopped
1 ? cups milk
3 beaten eggs
1 can cream style corn
2 pods Jalapeno Chili Peppers, chopped

1!. Preheat oven at 400 degrees!.

2!. Grease 2 ovenproof 9”-skillets or two 9”-square baking pans!.

3!. Combine all ingredients in a large mixing bowl!.

4!. Mix well!.

Cup Butter
1 Cup Sugar
4 Eggs
1 4-ounce can Green Chiles, seeded and chopped
1 16-ounce can Cream Style Corn
1/2 Cup Shredded mild Cheddar Cheese
1 Cup sifted Flour
1 Cup sifted Yellow Corn Meal
4 tsp!. Baking Powder
1/2 tsp!. Salt

Cream butter and sugar together!.

Mixing well, add eggs, one at a time!.

Add chiles, corn and cheese, and mix well!.

Sift flour and corn meal together with baking powder and salt, then add to corn mixture!.

Blend all the above ingredients well!.

Pour into a (greased with flour) or (non stick) 9x13-inch pan!.

Place pan in preheated oven at 350F, and immediately reduce heat to 300F!. Bake for an hour!. Serve hot!Www@FoodAQ@Com
