Peel, (Leave whole) boil for 10 mins, drain and rough up by shaking in the pan!. Place on a preheated baking tray with lots of olive oil!. Cook until golden and crunchy, approx 1-11/2 hours, turning periodically!.

Oven Roasted Potatoes:

INGREDIENTS
1/8 cup olive oil
1 tablespoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
4 large potatoes, peeled and cubed

DIRECTIONS
Preheat oven to 475 degrees F (245 degrees C)!.
In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt!. Stir in potatoes until evenly coated!. Place potatoes in a single layer on a roasting pan or baking sheet!.
Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides!.Www@FoodAQ@Com

* 4 fist-sized Potatoes, scrubbed cleaned and cut in chunks!.
* 5 glove Garlic, lightly crushed
* 2 tablespoon Olive Oil
* 2 teaspoon Dried Rosemary

1!. Mix everything well in a oven proof dish or alternatively, put everything in a ziploc bag and shake to mix well before pouring out to the dish!.

4!. Sprinkle additional salt and pepper to taste if you like!.

Par boil the potatoes, whilst they are boiling heat some oil in a pan in the oven!. When the potatoes have boiled for about 10 mins drain off and shake gently in a colander to 'rough up' the edges!. You can sprinkle a little bit of flour over if you want but it isn't necessary if they are roughed up!. Then add the potatoes to the hot oil turning so they have all been coated and roast in the oven for about 45-60 mins, they will turn out crisp and crunchy on the outside and fluffy in the middle!.

Greek Lemon Roasted Potatoes


1!. 4 large russet baking potatoes, peeled and quartered
2!. 1/2 cup olive oil
3!. 1/2 cup freshly squeezed lemon juice
4!. 1 tablespoon dried oregano, preferably Greek oregano, plus more for garnish
5!. 1 tablespoon salt
6!. 1/4 teaspoon freshly ground black pepper



1!. Heat oven to 500 degrees F!. Place potatoes in a metal roasting pan large enough to fit potatoes in a single layer!. Add 1 cup water, olive oil, lemon juice, dried oregano, salt, and pepper!. Toss potatoes until well coated!.
2!. Bake, uncovered, until fork-tender and brown on the edges, about 50 minutes!. Turn potatoes halfway through for even browning; add water if all the liquid has been absorbed, before they have fully browned!. If desired, garnish with oregano; serve!.

Hope you aren't a veggie cos they are best in dripping, lard!. goose fat or duck fat!. My wife taught me and hers are the best( creep!) From her teaching I peel and chop the spuds, in season Maris Piper are good though I'm sure my parents used King Edwards!. Then par-boil them till they just start to soften, drain in a colander (over a pan so you save the stock to cook your veggies and ultimately make your gravy with it) Then give them a good shake to roughen the edges up!. Oh sorry by this time you should have a roasting tin in a very hot oven with a big knob of your fat of choice!. Then carefully tip your potatoes in so they really sizzle and put straight back into the oven!. Now you can turn the temp!. down a couple of notches!. After 15Min's give them a good shake and keep going for about an hour until they are golden brown and wonderfully crispy!. I'm getting hungry!!! Boil them for 10 mins, then shake them roughly against the saucepan to bash them up a bit so they absorb the fat nicely!. So first of all grease your baking tray with REAL butter, then cut up your potatoes and sprinkle some salt, very little bit of pepper and a pinch of herbs!. Fill the pot with goose fat and then put it in the over to melt!. Add the patatoes and put them in the oven until they are as crispy as you like them!.

i par boil potatoes for 10 minutes,drain add to hot fat and baste them sprinkle a little salt on them and roast them for an hour turning once,they usually come out crispy and golden brown,my husband loves them!.Www@FoodAQ@Com

I generally parboil for about 5mins,give em a good shake to rough up the edges,then put in hot oil thats been pre heated in the oven for about 45mins on gas mark 8!.Www@FoodAQ@Com
