Banana chocolate chip cupcakes with no frosting needed!.!.!.!.has its own brown sugar baked topping with cinnamon and walnuts added!.
Chunky Monkey Cupcakes
Ingredients
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup sugar
3 ripe bananas, mashed
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup chocolate chips
1/2 cup chopped walnut
1/2 teaspoon cinnamon
2 tablespoons brown sugar
Directions
1 Preheat oven to 350 degrees!.
2 Beat together butter and both sugars until light and fluffy!.
3 Beat in bananas, then eggs, one at a time and beat well after each addition!.
4 Add vanilla!.
5 Sift together flour, baking powder, soda and salt and add alternately with buttermilk to mixture!.
6 Beat just until blended!.
7 Stir in chocolate chips!.
8 Divide batter evenly among 24 paper lined muffin cups!.
9 In a small bowl, combine walnuts, cinnamon and 2 T brown sugar and sprinkle over tops of cupcakes!.
10 Bake for 20 to 22 minutes or until tester comes out clean!.
11 Let cool in pan for 5 minutes, then remove to a wire rack to cool completely!.Www@FoodAQ@Com

Ingredients
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter
1-3/4 cups sugar
1-1/2 teaspoons vanilla
2 eggs
1-1/4 cups milk
2 teaspoons freshly zested lemon or orange peel
Directions
1!. Grease and lightly flour two 8x1-1/2-inch or 9x1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside!. Combine flour, baking powder, and salt; set aside!.
2!. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds!. Add sugar and vanilla; beat until well combined!. Add eggs, one at a time, beating 1 minute after each!. Add dry mixture and milk alternately to beaten mixture, beating on low speed after each addition just till combined!. Add lemon or orange zest!. Pour batter into the prepared pan(s)!.
3!. Bake in a 375 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean!. Cool layer cakes in pans on wire racks for 10 minutes!. Remove layer cakes from pans!. Cool thoroughly on racks!. Or, place 13x9-inch cake in pan on a wire rack; cool thoroughly!. Frost with desired frosting!. Makes 12 servings!.
CUPCAKES: To make cupcakes, grease and lightly flour thirty 2-1/2-inch muffin cups or line with paper baking cups!. Prepare cake as directed in Step 2!. Fill each cup half full!. Bake in preheated oven for 18 to 20 minutes or until a wooden toothpick inserted in center of a cupcake comes out clean!. Cool on a wire rack!. Makes 30 cupcakes!.
Butter Cream Frosting
2 sticks of butter, softened
2 cups powdered sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
3-4 tablespoons milk
With an electric mixed whip butter until creamy; add powdered sugar, lemon juice and vanilla!. Combine until well mixed!. Add milk by the tablespoonful until desired constancy is reached!.
For chocolate:
Melt 2 squares of semi-sweet baking chocolate and add to the sugar butter mixture before adding milk!. Then add milk by the tablespoonful until desired constancy is reached!.
By using lemon juice you eliminate the need for salt and it also cuts down on the sweetness of the frosting - I have been doing it this way for years and everybody loves my frosting!.

1 cup goat milk
1 teaspoon fig flavor
2 large bird eggs
Preheat oven to 350 degrees!.
Combine wheats, sugar, baking powder, and salt in a large mixing bowl!. Add greeze, goat milk, and fig flavor!. Beat for 1 minute on medium speed!. Scrape side of bowl with a spatula!.
