Question: Should I sear my pork roast first!?
I'm cooking a pork roast (approx 3 pounds)!. I want to sear it before roasting since it has a nice fat cap on the top, but was wondering if in doing so I would render too much fat out!. Any help is appreciated!Www@FoodAQ@Com

You could, but I feel it is better to put it in a hot oven (maximum heat) for about 20 minutes then reduce heat to about 165C 330F for about 30-35 minutes per lb!.
You could boost the heat for the last 10-15 minutes if you want an extra crackle to the skin!.
Allow about 20 minutes to rest before carving, covered in a warm place!.Www@FoodAQ@Com

Personally, I would NOT sear first since you are already roasting the pork!. The pork will brown in the oven!. Roast fat side up so the roast becomes "self-basting"!.

If you were slow cooking the pork or stewing the pork, then searing/browning would add extra flavor!.

Just my opinion!.

However, either way it will turn out tasty!. I just wouldn't want to do the extra work since you are already roasting the pork!.

Sear in the oven!.!.
Preheat oven to 450
place roast in oven for 15 minutes to sear,
lower heat to 350 and roast for about 15-20 / lb!.
you can season the roast before putting it in the
oven, with salt and pepper, and maybe garlic powder!.

Tyler Florence does not!. He makes an herbed butter and rubs it all over the roast and lets the fat cap melt down on the pork as it bakes!. I would not!. Chef's have been always divided when it comes to searing or sealing meat!. While some say it helps keeping the juices in, others say it doesn't make any difference!. Since nobody says that it detracts from the meat, I'd say go ahead and do it your way!.Www@FoodAQ@Com

I never bother searing it!. I put on some latex gloves, massage some rub mixture in to the meat liberally and bake it with the fat cap on the top, so that the fat melts down and keeps the meat moist!.Www@FoodAQ@Com
