Ripe/over-ripe bananas?!
I like to eat bananas slightly under-ripe but I hate to waste the ripe/over-ripe ones!. Currently I just force-feed my husband with them, but does anyone have a gluten-free recipe for banana cake or banana bread or banana anything that I could use them for instead!?Www@FoodAQ@Com

I had some over-ripe bananas that hadn't gone bad yet so I sliced them up and laid them on a flat tray/plate and put them into the freezer!. Then I just eat them straight out of the freezer, the texture is really nice : )

I like to peel, chop & freeze my over ripe bananas in little sandwich bags!. That way I can use them for smoothies or baking when ever I need them!. No force feeding required!. LOL!. Sorry I don't have any gluten free recipes but I do have my own speciall vegan banana bread recipe!.
~~~Banana walnut & almond cinnamon bread~~~
Ingredients:
2 ? Cups self raising flour
? Cup vegetable oil
? Cup soft tofu
1 ? Cup soy milk (300ml)
? Cup brown sugar
3 or 4 ripe bananas
? tsp salt
? tsp vanilla
1 tsp cinnamon
? Cup crushed walnuts
? Cup crushed almonds
Method:
1!. mash up bananas & tofu
2!. add soy milk, oil, vanilla, salt, sugar, cinnamon & nuts then whisk together
3!. sift flour in while mixing
4!. grease baking pan with margarine (I use canola or soy margarine)
5!. fill tray and bake for about 1hr at 180 degrees Celsius!. (time & temp may vary depending on your oven)
Enjoy!.!.!.!.

Seven Eggs, separated
1 cup Sugar
1 cup Potato starch flour
2-3 Bananas (mashed)
1 cup Ground walnuts
***Garnish***
Fresh strawberries, sliced
Ground walnuts for garnish
Preparation
Beat whites until stiff and set aside!.
In separate bowl, beat yolks and sugar together!.
Add potato starch slowly, beating to a smooth consistency!.
Add mashed bananas and groundnuts!. Gently fold mixture into whites!.
Grease bottom but not sides of tube pan!. Pour batter into pan and bake at 350-degrees for 45 minutes!.
Turn pan upside down and let cool!. Garnish with strawberries and ground walnuts!.Www@FoodAQ@Com

I"m the same way!.!. it's awful!. I just end up throwing it away!. Aside from banana bread!.!. no use for them but I have up them on my peanut butter strawberry jelly sandwhiches!.!. very yummy!.!. can't taste the ripeness!.!. it just makes a yummy sweet sandwhich :)Www@FoodAQ@Com

Gluten Free Banana Muffins
Ingredients:
1/2 cup margarine
1/2 cup brown sugar
1 teaspoon vanilla
Two eggs
1/4 cup sour cream
1 cup mashed bananas
3/4 cup brown rice flour
1/2 cup potato flour
1/4 cup low fat soy flour
2 teaspoons baking powder
1/4 teaspoon salt
Directions:
Preheat oven to 400-degrees!. Cream butter, sugar and vanilla until light and fluffy!. Add eggs one at a time, beating well after each!. Add sour cream and bananas and mix well!. Sift the dry ingredients and add to mixture!. Pour into non-stick muffins tins, 3/4 full and bake 15-20 minutes!.
Recipe makes about 18 muffins!.
Gluten Free Peanut Butter, Banana and Chocolate Chip Muffins
Ingredients:
3 bananas
2 eggs
1/2 cup raw sugar
1/2 cup creamy peanut butter
1 3/4 cups white rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter or shortening (melted)
1/2 cup buttermilk
1/2 cup chocolate chips
Directions:
Preheat oven to 350 degrees!.
Mix first four ingredients in a food processor!. Blend for one minute!.
Combine dry ingredients in a mixing bowl!.
When thoroughly mixed, add to food processor, along with the butter and milk!. Blend well!.
Add the chocolate chips, and press "pulse" once or twice!.
Ladle the batter into muffin tins lined with papers, filling each paper to the top!.
Bake for about 12 minutes, or until muffins are firm to the touch!. Cool and serve!. Top with frosting or chocolate drizzles, if desired!.Www@FoodAQ@Com
