Lemon Curry Rice

Ingredients
2 cups chicken broth
2 tablespoons lemon juice
1 cup uncooked regular long grain rice
1 teaspoon grated lemon, rind of
1/2 teaspoon curry powder
1/4 teaspoon garlic salt
1/4 teaspoon pepper
2 tablespoons toasted sliced almonds
2 tablespoons minced crystallized ginger
Directions
1Heat the broth, and lemon juice in a medium saucepan until boiling!.
2Add the rice, stir, and turn heat to low!.
3Cover and simmer for 15-20 minutes until rice is tender and liquid is absorbed!.
4Remove pan from heat!.
5Stir in lemon peel, curry powder, garlic salt and pepper!.
6Cover and let sit for 10 minutes!.
7Fluff rice lightly with fork and sprinkle with the toasted almonds and ginger!.

Ingredients
4 boneless chicken breasts
1/3 cup fresh lemon juice
3 tablespoons unsweetened apple juice
2 tablespoons white wine
1 teaspoon curry powder
2 teaspoons ground coriander
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 cup minced onion
2 cloves garlic, minced
1 tablespoon honey
salt & fresh ground pepper, to taste
2 teaspoons chili paste
Directions
1Combine all ingredients, except chicken and honey, in a medium skillet!. Mix thoroughly!.
2Place chicken in the pan and turn several times to coat!. Cover and marinate for 30 minutes
3Turn on heat and simmer for 25 minutes, turning chicken every 10 minutes!.
4Add honey, stir and cook for 10 minutes more, or until chicken is throughly cooked!.
