I would love to order tuna but...?!
The first time I ever tried fresh tuna steak was at college (Yes, my college serves ahi tuna) It was a piece of mouth-watering deliciousness!. I went to a restaurant a few months later and ordered some tuna for dinner!.!.!.they asked how I wanted it done!.!.!.I stumbled!. I did not know! I did not ask for it's doneness at college! Quickly, I said medium-rare!. I thought it would be okay, but what I got was very bloody and undesirable!. (Note: I like my burgers well done, so bloody is very 'ewww' to me)
I'll post a pic that is close to what the tuna resembled at college!. Anybody know what doneness I should ask for the next time I order tuna!? Thanks!

The picture you posted is one of a well cooked piece of tuna!. By that, I don't mean well done, just executed well!.
The problem with ordering fish in a restaurant is that you don't know the age of the fish or the quality!. Tuna is sold in several different grades and they all look different!. The cheap stuff is pumped with water solutions and coloring!. It gives it a peach/pink color!. The darker the flesh the more intense the flavor and usually the higher the price!. By intense I don't mean fishy by any means, just more flavorful!. The cheap stuff sells for around $8!.00 a pound retail and I have seen tuna sell for as much as around $60!.00 a pound!. And believe me, there is a huge difference in the way the fish tastes!.
You don't need to spend an arm and a leg for a nice piece of fish, what I would suggest is that you don't even bother ordering any from a restaurant that does not have a good reputation for seafood!. It will probably result in a hassle and a waste of money!.

From your pic I can tell you that that was rare yellowfin tuna not Ahi at all!. Ahi tuna is crimson in color and much fattier!. Many like it (including myself), however if it was bloody when put on your plate there was something very wrong!. No tuna rare or completely raw should be served like that, or should look like that!. The popularity of sushi has led to a rare tuna "norm"!.!. if you want it cooked through, simply tell them cooked through- well done and it is still good and the way you want it!.!. the tuna, unlike steak, does not lose tenderness by additional cooking!.Www@FoodAQ@Com
Right now "Seared" Tuna is the rage!.!.but i like mine a little more cooked no bloody running out!.
