Question: I'm baking Mahi Mahi tonight,!?
What should my side dishes be!?
I don't feel like having a veggie tonight!.

Coconut Rice:
1 cup coconut milk
1 1/2 cups water
1 teaspoon salt
3/4 teaspoon sugar
1 cup long grain white rice
3 tablespoons chopped fresh cilantro

In a saucepan, combine the coconut milk, water, salt, and sugar!. Bring to a boil!. Add the rice, stir well, and reduce the heat to medium-low!. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20 to 24 minutes!. Remove from the heat and let sit without stirring for 10 minutes!.
Fluff with a fork and add the cilantro!. Adjust seasoning, to taste!. Serve hot!.

Yield: 4 servings

Tropical Salsa :
1 ripe mango, peeled, seeded, and diced
1 ripe avocado, peeled, seeded, and diced
1/2 cup diced fresh pineapple
1/4 cup minced red onions
1/4 cup minced red bell peppers
3 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons minced jalapeno
1 teaspoon minced garlic
Pinch salt

Combine the mango, avocado, pineapple, onions, bell peppers, cilantro, lime juice, jalapeno, garlic, and salt in a bowl and gently fold to combine!. Adjust seasoning to taste!. Let sit for 30 minutes before serving for the flavors to blend!.

Asparagus:
2 dozen medium asparagus, tough ends removed Garlic oil, reserved from garlic chips,* salt and black pepper, to taste

Preheat the oven to 350 degrees F!. In an oven proof saute pan, combine the asparagus, garlic oil, salt and pepper and roast in the oven for about 5 minutes, until the asparagus are tender!.

Garlic Chips: 4 garlic cloves, thinly sliced 1 cup canola oil

Prepare a saucepan over high heat and add the oil and the garlic!. When the garlic becomes golden brown, remove from the heat!. Strain the garlic and reserve both the garlic and the oil!.

How about a light and simple pasta dish!.!.!.
Angel Hair Pasta in Garlic Sauce

1 pkt capellini (angel hair) pasta - (16 oz)
1/4 cup olive or vegetable oil
1/4 cup chopped fresh parsley
4 x garlic cloves finely chopped
1/2 cup freshly-grated Parmesan cheese
Freshly-ground black pepper to serve

Method :
Cook pasta as directed on package!.
While pasta is cooking, heat oil in 10-inch skillet over medium-high heat!. Cook parsley and garlic in oil, stirring frequently, until garlic is golden!.
Drain pasta; mix with garlic mixture!. Sprinkle with cheese!. Serve with pepper!.

Served with an Apple Nut Salad!.!.

Apple-Nut Salad

Ingredients

1 Pudding, vanilla, sugar free, dry serving, , 1 pkg
1 Gelatin, orange, sugar free, dry serving, , 1 pkg
2/3 cup Milk, nonfat/skim, dry
1 1/3 cup water
3/4 cup whipped fat-free topping
1 cup fresh chopped celery, finely chopped
3 fresh medium apples, unpeeled, and chopped Red Delicious apples
1/4 cup chopped pecans

Serving size: 1/2 cup
Calories 95!.2

Directions
1 Using a wire whisk, combine the dry pudding mix, dry gelatin, dry milk powder, and water!.
2 Then blend in the Cool Whip Free, and mix in the celery, apples, and pecans!.
3 Cover, refrigerate for at least 15 minutes, stir once more, and serve!.

I am baking fish tonight too (Sockeye Salmon), these sides sound perfect!.

Hot Garlic Buttered Noodles

Ingredients
1/2 cup butter
salt or pepper
8 ounces egg noodles, cooked according to directions
3 garlic cloves, crushed
2 tablespoons olive oil
Directions
1 Heat Olive oil in medium skillet over medium heat!.
2 Add garlic, cook 2-3 minutes!.
3 Add 1/2 stick of butter, melt completely!.
4 Add noodles and toss with salt and pepper to taste!.

Potatoes - always potatoes!! Mashed with butter, 8 oz!. sour cream, 8 oz cream cheese, green onions, salt/pepper, and cajun seaoning on top is the best!!

You could also do a light pasta!. They make some that come ready - just add milk, water, butter!. I love the parmesan noodles!.Www@FoodAQ@Com
