Question: How do you make BAKED macaroni and cheese!? I don't like it when it is cheesy and slimy,!.!.!.!.!?
I want the cheese to be nice and hard!.!.!.my mother used to make it, but now I am craving it and I have no idea how to make it!.!.please helpWww@FoodAQ@Com

Baked Mac & Cheese

Ingredients
24 ounces macaroni
1/2 cup butter
1/2 cup flour
4 cups milk
16 ounces Velveeta cheese (sometimes I use even more)
1 pinch white pepper or black pepper
1-2 cup shredded cheddar cheese
Directions
1 Preheat oven to 350 degrees Fahrenheit!.
2 Prepare macaroni according to package directions!.
3 Melt butter in a large pan!.
4 Whisk flour into melted butter to create a light roux (paste)!.
5 Slowly whisk milk into the roux, whisking constantly to avoid lumps!.
6 Allow milk and roux to heat for about one minute, then begin adding the Velveeta!.
7 Continue to gently whisk the mixture until all Velveeta has melted, then add a pinch of white or black pepper!.
8 After macaroni has cooked, drain the water from the pot and mix in the cheese sauce!.
9 Once the macaroni and sauce are mixed together, tranfer to a 9 x 13 baking dish!.
10 Cook uncovered for 25-30 minutes or until bubbly!.
11 Sprinkle 1 or 2 cups of shredded cheddar cheese over the top and bake for 5 more minutes, or until cheddar cheese is throughly melted!.
12 Remove from oven and allow to cool for 5 to 10 minutes before serving!.Www@FoodAQ@Com

Do you have an old Better Homes & Gardens cookbook!? I have mine as well as my mother's because they've changed a lot of the recipes!. Anyway, the mac & cheese in my mother's is the recipe we always use!. Instead of making a cheese sauce and mixing it with the pasta and then baking it, the milk and egg is stirred together and poured over the cooked pasta in the casserole and then the cheese is slightly stirred into it and it's all baked!. This gives you some cheese through most of it, but not total coverage!. We also put bread crumbs over the top!. It's a wonderful dish and I was always so surprized that other people didn't make it the same way when they were making baked mac & cheese rather than just mac & cheese!.

Here's my recipe!.!.!.I got it from the newspaper many years ago and have used it so many times I have it memorized!. I've adapted it slightly because it was too rich when I did exactly what the newspaper recipe said!. You can leave out the dry mustard if you don't have any, but it does add some flavor!.

16 oz macaroni
1/2 cup butter or margarine
1/2 cup flour
salt and pepper to taste
1 tsp worcestershire sauce
1/2 tsp dry mustard
12 oz cheddar cheese


Preheat your oven to 350 and grease a large casserole dish or 9x13 pan!.

Cook a 16 oz package of macaroni according to the package directions!. Drain!.

Melt the butter in a 2 quart saucepan or a skillet!. Add flour, and cook until bubbly!. Add milk, and flavorings!. Cook, stirring constantly, until the mixture boils and thickens!. Stir in the cheddar cheese until it's melted!. Turn the heat off, and mix the macaroni and the sauce!. Spread the macaroni in the prepared pan, and bake for 30 minutes!.Www@FoodAQ@Com
