I would have to say charcoal provided the coals are spread evenly!.
The problem with gas is that you have hot and cool spots on the grill surface no matter how expensive the grill (Mine is a $2K Weber Summit)!.
In order to cook evenly with wood, you need a bit commercial pit that takes the heat and distributes it separate from the firebox into the cooking area!.Www@FoodAQ@Com
