Question: I want to know where I can find the 'original and classic' cheesecake recipe!?
I really want to impress my fella he wants me to make him a cheesecake but with nothing on it like chocolate or fruit he wants the original one!.

I am going to use some lemon juice and vanilla pods but what is the best classic and original filling!.Www@FoodAQ@Com

CLASSIC CHEESECAKE

1/3 c!. butter
1/3 c!. sugar
1 egg
1 1/4 c!. flour
2 (8 oz!.) cream cheese, softened
1/2 c!. sugar
1 tbsp!. lemon juice - 1 tsp!. lemon rind
1/2 tsp!. vanilla
3 eggs
1 c!. sour cream
1 tbsp!. sugar
1 tsp!. vanilla

Crust: Cream butter and sugar; blend in egg!. Add flour and mix well!. Spread dough on bottom and 1 1/2 inches high in 9 inch springform pan!. Bake at 450 degrees for 5 minutes!. Remove!. Reduce oven to 325 degrees!. Beat softened cream cheese, sugar, juice, rind and vanilla until well blended!. Add eggs, one at a time; mix well after each!. Pour mixture into shell!.
Bake at 325 degrees for 50 minutes!. Combine sour cream, sugar, vanilla; mix well!. Spread over cake!. Bake 10 minutes!. Remove from oven and loosen rim from cake!. Let cake cool completely before removing rim!. Chill and serve!. 10 servings!.

Classic American Cheesecake

Ingredients
2 lbs cream cheese, room temperature
1 cup sugar
1 teaspoon vanilla
1/2 teaspoon salt
4 large eggs
1 lemon, zest of, of finely grated
Crust
1/3 cup unsalted butter
1 1/2 cups dry cookie crumbs, such as gingersnaps or graham crackers
3 tablespoons sugar
melted butter, for brushing pan
Directions
1 Preheat oven to 300 degrees!.
2 Brush a 9-inch springform pan generously with melted butter!.
3 For crust: Melt butter, stir in cookie crumbs and sugar!.
4 press the mixture into the bottom of the pan, spreading evenly with the back of a spoon!.
5 Bake until lightly toasted- about 13-15 minutes!.
6 Remove from oven and cool!.
7 For the cheesecake: In an electric mixer with a paddle attachment, beat cream cheese on low speed until soft and smooth!.
8 Add sugar, vanilla and salt and continue beating until light and creamy- 3-4 minutes!.
9 Add eggs one at a time, beating until smooth and scraping down the sides after each addition!.
10 Stir in zest!.
11 Pour batter into springform pan and bake until done (center will be slightly jiggly)- 1-1 1/2 hours!.
12 Turn oven off and leave door slightly open for 1 hour!.
13 Transfer to refrigerator and chill overnight!.

EASY CHEESECAKE (RED LOBSTER)
Ingredients:

CRUST:
10 ounces Pk Lorna Doone cookies -- crush
1/4 pound Butter -- melted
1/4 cup Sugar
1 Env Knox unflavored gelatin

FILLING:
16 ounces Cream cheese -- room temp
8 ounces Sour cream
2 large Eggs
2 tablespoon Butter
2 tablespoon Cornstarch
1 cup Sugar
1 teaspoon Vanilla
Crushed cookie crumbs

Instructions:
CRUST-Mix crumbs with butter, sugar and gelatin!. Pat out evenly over bottom of greased 9" springform pam!. Bake at 350~ exactly 8 minutes!.

FILLING-Beat with electric mixer cream cheese, sour cream, eggs, butter, cornstarch, sugar and vanilla!. When the filling is perfectly smooth and creamy pour into crust!. Return to 350~ oven and bake 30 to 35 minutes or until a knife inserted comes out clean!. Cool in pan on rack 20 minutes before releasing springform from the cake!. Cool another 20 minutes before cutting!. Sprinkle top with cookie crumbs!.

NEW YORK DELI CHEESECAKE

32 oz!. cream cheese, softened
2 tbsp!. cornstarch
2 c!. sugar
1 tsp!. vanilla extract
1 tbsp!. lemon juice
1 pt!. sour cream
5 eggs, add 1 egg at a time
Butter flavored shortening

Preheat oven to 250 degrees!. Cover base of 8 inch spring pan with aluminum foil, attach side of pan!. Turn up foil edges around outside of pan to prevent batter from leaking!.
Grease pan with shortening!. Mix all ingredients thoroughly, adding eggs one at a time!. Mix at least 5 minutes!. Pour batter into pan!. Jostle out any air bubbles!. Bake for 1 hour, turn oven off and let stand in oven for another hour!. Do not open oven door while baking/cooling!. Remove cake from oven and place in refrigerator for 8 hours!. Do not open refrigerator for first 4 hours!. Serve plain or with your favorite topping!.

AUTHENTIC "JEWISH" DELI CHEESECAKE

5 (8 oz!.) pkgs!. cream cheese
1/4 tsp!. vanilla
3/4 tsp!. lemon peel, grated
1 3/4 c!. sugar
3 tbsp!. all-purpose flour
1/4 tsp!. salt
4 - 5 eggs and 2 additional yolks
1/4 c!. whipping cream
Graham cracker crumb crust

Prepare graham cracker crust and press in bottom of spring form pan!. Let cream cheese stand at room temperature!. Beat until creamy!. Add vanilla and lemon peel!. In another bowl, mix sugar, flour and salt!. Then, mix slowly with cheese!. Add eggs and yolks, one at a time!. Stir in cream!. Bake at 450 degrees for 12 minutes!. Then bake at 300 degrees for 55 minutes, or until knife inserted in center comes out clean!. Let stand for 30 minutes!.
